Abstract: RESUMOO objetivo deste trabalho foi avaliar a qualidade e aceitação da carne de tilápias com ou sem o procedimento de depuração e testar algumas formas de preparo com massa cárnea de carpas. O experimento foi conduzido nas instalações do Setor de Piscicultura do IFFAR Campus São Vicente do Sul/RS.
