Bu çalışmada Muğla Akyaka Kadın Azmağı'ından toplanan yeşil makroalg Enteromorpha intestinalis'in besinsel kompozisyonunun mevsimsel olarak belirlenmesi ve gıda amaçlı kullanımının tespiti amaçlanmıştır. Ortam koşulları ve ardından etüvde kurutma işleminden sonra, E. intestinalis çay, çorba ve baharat şeklinde hazırlanmış ardından duyusal değerlendirmeye alınmıştır. Besinsel kompozisyon analiz sonuçlarına göre; ancak E. intestinalis'in içerdiği daha yüksek miktarda protein, ilkbaharda kül ve C vitamini, sonbaharda çoklu doymamış yağ asitleri nedeniyle, kullanım alanına bağlı olarak 12 ay boyunca değerlendirilebileceği düşünülmektedir. Duyusal analiz bulgularına göre ise; elde edilen ürünler Türk damak tadına çok yakın olmasa da, ürünlerin farklı içeriklerle çeşitlendirilmesinin kabul edilebilirliklerini arttırdığı sonucuna varılmıştır.

A simple, fast, inexpensive, and reliable method useful for the simultaneous, routine determination of thiamin and riboflavin in mushrooms is examined. It uses the extraction procedure, with slight modifications, proposed by the AOAC for the extraction of thiamin and riboflavin, followed by a liquid chromatographic separation on a reversed-phase Spherisorb ODS column with methanol/water as mobile phase gradient. Fluorometric detection is used at the following excitation and emission wavelengths, respectively, 360 and 425 nm in the case of thiamin and 422 and 515 nm for riboflavin. The analytical parameters of linearity, the precision of the method (RSD = 2.45 and 2.51% for thiamin and riboflavin, respectively), and the results of the comparison with the corresponding AOAC fluorometric methods show that the studied method is useful for the measurement of thiamin and riboflavin in fresh mushrooms.

-In this study, both macro-and micro-nutrients of a total of 18 regional fruits were analyzed in order to launch a new and reliable food composition database (FCDB) of Turkish food composition, TürKomp. The new high quality analytical data were compared with some well-known FCDBs datasets. The new data produced in TürKomp is expected to be an invaluable source that would be used in dietary programmes and nutrition surveys in Turkey.Keywords: Turkey / temperate and Mediterranean fruits / stone and pome fruits / nutritional value / dietary guidelines / primary and secondary nutrients Résumé -Composition nutritionnelle des fruits de Turquie : Résultats scientifiques issus de la nouvelle table de composition alimentaire turque, TürKomp. Dans cette étude, les micro et macronutriments d'un total de 18 fruits régionaux ont été analysés dans le but d'établir une base de données alimentaires (FCDB) nouvelle et fiable, TürKomp, sur la composition nutritionnelle du régime alimentaire turc. Les nouvelles données analytiques de haute qualité ont été comparées à l'ensemble des données nationales bien connues (bases de données FCDB). Les nouvelles données produites dans TürKomp doivent apporter une information inestimable utile aux programmes alimentaires et aux enquêtes nutritionnelles en Turquie.
