Functional drinks are processed drinks that contain food components that are beneficial for body health and have good sensory evaluation. Functional drinks can be used to prevent degenerative diseases such as diabetes mellitus. Kombucha is a functional drink fermented from tea and sugar using a kombucha starter or Symbiotic Culture of Bacteria and Yeast (SCOBY). Kombucha has functions as an antioxidant, antidiabetic, anticancer and antimicrobial. A variety of leaves that include phenols and bitter leaves with components that are beneficial to the body can be used to make kombucha. Palm sugar can be used as alternative sugar for kombucha fermentation because palm sugar has a low glycemic index of 35. This study aims to determine the effect of using palm sugar concentration on total dissolved solids, viscosity, pH value, total flavonoids, total phenols, and reducing sugar content. The research results show that the use of palm sugar can increase total dissolved solids, viscosity, pH value, total flavonoids, total phenols and reducing sugars. The best treatment is the use of 25% palm sugar with a total soluble solids value of 18.38˚Brix, viscosity of 1.37 cP, pH value of 3.43, total flavonoids of 0.275 mg QE/g sample, total phenols of 0.99 mg GAE/ml, and reducing sugar of 9.24%.

The production of kombucha using local apple peels is expected to reduce the production of apple peel waste while increasing the nutritional and functional value of kombucha products. This study aimed to determine the active compounds and antibacterial activity of kombucha apple peels against MRSA (Methicillin Resistant Staphylococcus aureus). This research was carried out experimentally in a completely randomised design with two factors: the apple varieties (Anna, Manalagi, and Romebeauty) and the concentration of the apple peel substrate (2.5%, 7.5% and 12.5%). The analyses comprised phytochemical screening and antimicrobial activity testing, both qualitative and quantitative. The results showed that the kombucha apple peel contains tannins, saponins, flavonoids, polyphenols, and organic acids. The average total phenolic, total acid, and antibacterial activities of Kombucha apple peels were significantly (α≤0.05) differently affected by apple cultivar and substrate concentration. Antimicrobial activity against MRSA showed a range of weak to moderate inhibition, with the highest inhibition zone diameter value of 6.58 ± 0.52 mm in the Anna variety treatment at 12.5% substrate concentration. The MIC of the best treated kombucha was found at a concentration of 85%, while the MBC could not be determined.

Pemanfaatan Kombucha bukan hanya sebagai minuman probiotik untuk mengatasi permasalahan metabolisme tubuh tapi juga memiliki banyak manfaat untuk memelihara kesehatan kulit dan mengatasi permasalahan kesehatan yang bermanifestasi pada kulit. Kombucha kaya akan antioksidan yang mampu melawan radikal bebas untuk mencegah penuaan dini, dan juga mengandung berbagai macam nutrisi yang bermanfaat untuk kulit seperti vitamin B2, B6 dan B12. Kegiatan Pengabdian Kepada Masyarakat ini dilaksanakan pada hari Rabu, 07 Desember 2022 dan disajikan dalam bentuk edukasi tentang manfaat teh kombucha bagi kesehatan kulit dan praktik pembuatan minuman fermentasi probiotik teh kombucha. Kegiatan ini dilaksanakan di Kantor Desa Moncongloe Bulu, Kecamatan Moncongloe Kabupaten Maros yang dihadiri oleh 33 perserta terdiri dari aparat desa dan ibu-ibu PKK setempat. Tujuan dari kegiatan ini adalah untuk meningkatkan keterampilan masyarakat tentang pembuatan minuman fermentasi probiotik dari teh kombucha sebagai minuman untuk membantu menjaga kesehatan kondisi kulit dari dalam dan juga dapat dimanfaatkan sebagai toner untuk menghidrasi kulit wajah. Metode yang digunakan meliputi persiapan tempat pelatihan, pengisian absensi peserta dan kuisioner, pembukaan acara pelatihan, pelaksanaan dan pelatihan pembuatan minuman kombucha serta dosis dan cara konsumsi kombucha. Berdasarkan hasil kegiatan menunjukkan bahwa informasi tentang pemanfaatan kombucha sebagai minuman fungsional bagi kesehatan kulit sebagian besar belum diketahui oleh masyarakat Desa Moncongloe. Kesimpulan dari kegiatan ini adalah masyarakat mampu memahami materi edukasi tentang pentingnya menjaga kesehatan kulit dan mampu membuat minuman fungsional berbahan dasar fermentasi probiotik kombucha.
