Adding genistein or luteolin decreased the yield of citrinin and without reducing pigments in yam solid‐fermentation by Monascus

Abstract: BACKGROUNDChinese yam fermented by Monascus, namely red mold dioscorea (RMD), has the potential of treating diseases. However, the production of citrinin limits the application of RMD.
