A New Method for the Quantitative Determination of Protein of Bacterial Origin on the Basis of D-Aspartic Acid and D-Glutamic Acid Content

Abstract: In the past years several methods have been developed for the determination of the proportion of the nitrogen-containing substances of microbial origin passed from the rumen into the abomasum or the small intestine. Recently, on examining the D-amino acid content of foodstuffs, particularly milk and milk products, it has been observed that, in addition to D-Ala, Dglutamic acid (D-Glu) and D-aspartic acid (D-Asp) can also be detected in similar quantities, primarily in products which have links with bacterial a… Show more

“…d-Asp and d-Glu can serve as indicators for proteins of bacterial origin [64]; anaerobic bacteria are capable of using DAAs and l-sugars for growth [65]; [68 -70]. Substitution of DAAs in the peptides designed to reduce susceptibility to digestion enhances the activity of pleurocydin [71], bombinins H [72], lacticin [73], and other antibiotic peptides [74 -76].…”

“…In their study, the highest correlation ( r = 0.95) between the markers of bacterial protein was between d ‐Asp– d ‐Glu; in the present study, this correlation was just 0.58. However, Csapo et al. (2001b) did not find a close correlation between the concentration of bacterial protein and all three bacterial markers ( d ‐Asp, d ‐Glu and DAPA) in duodenal chyme.…”

“…; particle size, 5 µm) using gradient elution (solvent A 40% methanol in 9.5 mM phosphate buffer, pH = 7.05; solvent B acetonitrile). It was concluded from the data that the measurement of the D-Asp and D-Glu content of a protein may help the determination of the bacterial origin of a protein (Csapó et al, 2002).…”
