Corn is a vital food source for human consumption, animal feed as well as industrial processing. However, corn faces repeated spoilage and contamination by a huge range of fungi especially by Fusarium and Aspergillus species. These fungi are known of producing mycotoxins such as fumonisins (FBs), moniliformin (MON), zearalenone (ZEA), beauvericin (BEA) and aflatoxins (AFs). The main objective of this study was to quantify the mycotoxins produced by both fungi associated with cornmeal in Malaysia. The extracted mycotoxins were qualitatively analyzed using A. salina bioassay, and quantitatively using Ultra-fast Performance Liquid Chromatography (UFLC). Three hundred and fourteen isolates of microfungi were obtained, 90.5% isolates belonged to Aspergillus species, namely A. flavus (76.8%), A. niger (7.6%), A. nidulans (4.5%) and A. fumigatus (1.6%). Another 9.6% isolates were Fusarium species, identified as F. verticillioides (4.5%), F. semitectum (3.2%) and F. proliferatum (1.9%). As for the mycotoxin analysis, out of 40 isolates of Aspergillus, 29 isolates produced AFB 1 and only two isolates produced AFB 2 . Fifteen out of 16 Fusarium isolates produced MON, 12 isolates produced BEA and all isolates produced FB 1 , but none of them produced ZEA. The analysis of A. salina revealed that all the five mycotoxins extracts were toxic to the brine shrimp despite the concentration of the mycotoxins.

Spoilage fungi are ubiquitous contaminants of cereals, pre-and post-harvest. These fungi can produce a wide range of secondary metabolites under ecological conditions which are conducive for growth. However, some of these secondary metabolites are toxic and have a significant impact if they enter the production and animal food chains. Prevention of mycotoxin contamination of feed and food raw materials is now considered more important than subsequent cure. The key ecological determinants pre-and post-harvest are water availability and temperature (climate). Accurate information is therefore needed on the impact of an association between these key factors, and it is necessary to understand which are marginal and which critical for germination and toxin production. There have only been a few studies where attempts have been made to integrate the available information on these factors in relation to different raw materials for feed and food processing, especially cereals. This review will examine the available information on the main climatic factors, i.e., water availability and temperature affecting mycotoxin production such as, aflatoxins, ochratoxins, fumonisins, zearalenone, deoxynivalenol and citrinin. This information is crucial for accurately focusing and monitoring key critical control points in the feed and food chain to optimise prevention strategies.

Globalization of the trade in agricultural commodities has contributed significantly to the discussion about potential hazards involved and has increased in particular the awareness of mycotoxins. Safety awareness in food and feed production has also risen due to the simple fact that methods for testing residues and undesirable substances have become noticeably more sophisticated and more available at all points of the supply chain. Mycotoxins comprise of a family of fungal toxins, many of which have been implicated as chemical progenitors of toxicity in man and animals. There are four classes of mycotoxins of major concern namely aflatoxins, zearalenone, ochratoxins, and fumonisins. Formation of mycotoxins varied between species as well as within a given species. A variety of physical, chemical, and biological methods to counteract the mycotoxin problem have been reported, but large-scale, practical, and cost-effective methods for detoxifying mycotoxin-containing feedstuffs are currently not available. Detoxification strategies for the contaminated foods and feeds should be done to reduce or eliminate the adverse actions of mycotoxin to improve food safety and prevent economic losses. The most recent approach to the problem has been the addition to the animal's diet of nonnutritive sorbents that sequester mycotoxins, reduce their gastrointestinal absorption and avoiding their toxic effects on livestock and toxin carryover into animal products. This review comments on the potential hazards of several mycotoxins together with prevention strategy for fungal and mycotoxin contamination.
