Potato is a valuable source for phytochemicals like vitamins, minerals, plant phenols, amino acids and proteins. However, environmental stress may affect the level of all these components. In this study, two purple breeding clones and one yellow fleshed cultivar (cv.) were assessed in their response to drought and wounding stress in two consecutive years. The plants were grown in the greenhouse under control (sufficient water supply) and with drought stress conditions. After harvest the tubers were analyzed for the content of soluble phenols and proteins in fresh tissue and after wounding. In addition, free amino acids (AAS) and activity of lipid acyl hydrolases (LAH) were assayed in control and drought stressed tubers. The results revealed significant differences in soluble phenols and proteins between genotypes, and that drought stress significantly increased the level of soluble proteins (P < 0.0001) and LAH activity (P < 0.001), but had no significant effect on the concentration of phenols. Moreover, total amounts of free AAS were higher in the drought stress variant. Wounding stress caused a significant increase of soluble phenols in cv. Agave. But, this was less prominent in purple clones which in general had higher contents of phenols. Proteins were also enhanced as a result of wounding, although, the effect of wounding stress on their level was smaller than that of drought stress.

RESUMO -Este trabalho objetivou identificar as variáveis que se associam às injúrias pelo frio e determinar as diferenças nos parâmetros de qualidade que melhor caracterizam mangas 'Tommy Atkins' submetidas à condição de injúria pelo frio, utilizando-se da análise de fatores em componentes principais e a análise de agrupamentos. Frutos colhidos no estádio "de vez" foram cuidadosamente transportados, selecionados, padronizados quanto a coloração, tamanho e ausência de injúrias, e tratados com fungicida antes de serem armazenados a 2 ºC (74,8% UR), 5 °C (75,4% UR) e 12 °C (76,4% UR), por até 28 dias. Os frutos foram avaliados semanalmente quanto à ocorrência de danos pelo frio, coloração da casca e da polpa, firmeza da polpa, teores de sólidos solúveis, acidez titulável, açúcares solúveis e redutores, ácido ascórbico e atividade das enzimas peroxidase, polifenoloxidase e fenilalanina amônia-liase. A análise estatística multivariada dos fatores em componentes principais e agrupamentos permitiram melhor compreensão do efeito do armazenamento, sob condição de chilling, no metabolismo de mangas 'Tommy Atkins' e indicaram que o dano está intimamente relacionado com a casca e que a resposta da polpa ao estresse ocorre de forma tardia. Semi-ripe fruits were harvested and carefully transported, selected and standardized for color, size and absence of injuries, and treated with fungicide, before storage at 2 °C (74,8% RH), 5 °C (75,4% RH) and 12 °C (76,4% RH) for 28 days. Fruits were evaluated weekly for the occurrence of chilling injury, peel and pulp color firmness, soluble solids, titratable acidity, soluble and reducing sugars, and ascorbic acid content. Activities of peroxidase, polyphenoloxidase and phenylalanine ammonia-lyase were determined, as well. The multivariate statistic analysis helped to better understand the storage effect in the metabolism of mangoes 'Tommy Atkins' under chilling condition, and indicated that the damage is closely related to the peel, and that the pulp response to the stress occurs later.

-the objective of this study was to evaluate the effect of heat treatment and ultraviolet radiation (uV-C) in the prevention of chilling injury in mangoes cv. tommy Atkins previously stored or not under injury condition after their transference to ambient condition. Fruits were divided into groups: two were hydrothermally treated (46.1 ºC/90 min; 55 ºC/5 min) and two were exposed to uV-C radiation (1.14 kJ m -2 ; 2.28 kJ m -2 ). these groups were stored under chilling injury conditions (5 ºC for 14 days), as established in preliminary tests. other untreated groups were stored at 12 ºC or 5 ºC. After the storage period, they were transferred to ambient conditions (21.9 ºC; 55% Rh) and the quality was evaluated. All the data were submitted to multivariate analysis as the tool to verify the simultaneous effect of the treatments under the quality parameters. the multivariate analysis indicated that the hydrothermal treatments at 46.1 °C/90 min and 55 °C/5 min and the uV-C radiation at doses of 1.14 kJ m -2 and 2.28 kJ m -2 were effective in minimized the symptoms of chilling injury in mangoes 'tommy Atkins' stored at 5 °C for 14 days. however, after their transference to environmental condition at 21.9 °C, only the uV-C kept this control, especially at a dose of 2.28 kJ m -2 . this treatment did not prevent the development of the characteristic color or affected the normal ripening and allowed the conservation of fruit for a period of 14 days at 5 °C, plus seven days of storage at environmental condition, which corresponds to the shipping transportation plus the time for sale.
