Cysteine is important for protein synthesis, detoxification, and diverse metabolic functions.However, cysteine metabolism has been poorly described in fish, and the role of the therapeutic effect in pesticide toxicology on aquatic organisms is unknown. The aim of this study was to determine the effects of regular cysteine treatment on the hematology, biochemistry, apoptosis, oxidative DNA damage, and antioxidant parameters in fish blood after chemical application. Therefore, fish were exposed to cypermethrin for 2 weeks. Then two different concentrations of N-acetylcysteine (NAC) were applied for a 4-day treatment period and compared with the group of the self-healing process. At the end of the treatment, the hematological index, blood biochemical parameters, paraoxonase (PON), arylesterase (ARE), and myeloperoxidase (MPO) activities in the fish blood samples were investigated. With regard to the hematological parameters, statistical differences were obtained except for mean corpuscular hemoglobin (MCH) and mean corpuscular hemoglobin concentration (MCHC) (P < 0.05). Enzyme activities (ARE, PON, and MPO), as well as some biochemical parameters (creatinin [Cre], alanine amino transferase, total glyceride, alkaline phosphatase, iron, calcium, low density lipoprotein-cholesterol [LDL-C],sodium, and potassium), were found to be importantly different among all groups at the P < 0.05 level, while 8-hydroxydeoxyguanosine and caspase-3 levels were determined to be high in the pesticide group but decreased significantly in NAC-treated groups (P < 0.05).According to the results of the study, acute cysteine treatment showed an ameliorative effect on the hematological index, biochemical parameters, PON, MPO, and ARE in the blood in the all the treatment group fish. The positive effect of NAC on protein synthesis, detoxification, and diverse metabolic functions against cypermethrin toxicity was more effective in 1.0 mM NAC. In recent years black mussels are one of the most commercially important species from the Bulgarian Black Sea. The marine mollusks are valuable healthy food, low in calories and fats and high in proteins. They are a major dietary source of fat soluble pigments - astaxanthin, carotenoids and polyunsaturated fatty acids (PUFA). To our knowledge the information about the nutritional quality of mussels from the Bulgarian Black Sea waters, based on chemical composition, fat soluble pigments, cholesterol and PUFA content is very limited. The aim of the present study is to determine and compare protein, lipid, carbohydrate and energy values, fat soluble pigments, cholesterol and fatty acid composition in farmed mussels (Mytilus galloprovincialis) from the Bulgarian northern and southern parts of the Black Sea coast. The mussel samples were analyzed for lipids (Bligh & Dyer method), crude proteins (Kjeldahl method), carbohydrates and moistures according to the AOAC (1990) methods. Fatty acids were analyzed by the GC-MS system. Fat soluble pigments and cholesterol were analyzed simultaneously by the RP-HPLC system. Lipid and protein content were found to be higher in mussels from the northern region. In accordance with the Commission Regulation (EC) No. 116/2010 all analyzed mussel samples can be classified as high in protein and low in fats and carbohydrates. The amount of cholesterol, contained in all mussel populations is significantly low, while the omega-3 (n-3) is significantly higher than the omega-6 PUFA. A portion of 100 g edible tissue provides 0.500 g more of the required amount of eicosapentaenoic acid (20:5) and docosahexaenoic acid (22:6) n-3 PUFA according to EFSA (2012). It can be concluded that the studied mussel aquaculture in the Black Sea is beneficial food for the human health and it is advisable to be part of a proper or a preventive diet of Bulgarian consumers.

This study examined the optimal salting drying method and processing conditions (salt concentration, curing time, dry temperature, and drying time) for preparing salted semi-dried common gray mullet (SSD-CGM) Mugil cephalus based on the moisture content, salinity, and overall acceptance using response surface methodology (RSM). The moisture content, salinity, and overall acceptance of SSD-CGM prepared with different salting methods revealed that dry salting was the optimal salting method for preparing high-quality SSD-CGM. The optimal drying method for preparing high-quality SSD-CGM based on the drying velocity and sensory color was hot air-blast drying. The results of the RSM program indicated that the optimal independent variables (X 1 , salt concentration; X 2 , curing time; X 3 , dry temperature; X 4 , drying time) based on the dependent variables (Y 1 , moisture content; Y 2 , salinity; Y 3 , overall acceptance) for high-quality SSD-CGM were 5.6% for X 1 , 2.7 h for X 2 , 47.0°C for X 3, and 8.5 h for X 4 for uncoded values. The predicted values of Y 1 , Y 2 , and Y 3 for SSD-CGM prepared under optimal conditions were 54.4%, 4.2%, and 6.3, respectively, while the experimental values were 55.2±1.0%, 4.1±0.3% and 6.7±0.8. The actual and predicted values did not differ.
