The nutritional composition of vegetables is adversely affected by the method of processing for storage or preservation. This study was designed to determine the effect of blanching, boiling, and drying on the nutritional composition of selected vegetables using standard analytical methods. Proximate analysis was carried out on the fresh and processed leaf samples. Results obtained revealed that all the vegetables analyzed contained an appreciable amount of moisture, ash, protein, fiber, carbohydrate, β-carotene, and vitamins. Results also showed that all the processing methods employed significantly reduced (p < 0.05) the nutritional compositions of the vegetables studied. However, drying under the shade retained more nutrients compared to the other processing methods. Drying significantly increased (p < 0.05) the carbohydrate and protein contents of all the leaves (79.92 % & 7.51 % respectively in Basella alba, 66.74 % & 12.09 % respectively in Amaranthus hybridus, 82.56 % & 10.07 % respectively in Celosia argentea, 70.77 % & 13.05 % respectively in Gnetum africanum and 89.12 % & 4.70 % respectively in Talinum triangulare) compared to blanching, boiling and the control. Thus, from the three processing methods studied, drying was the most effective processing method that retained nutrients and is, therefore, a good preservation method for the vegetables.

The outbreak of the COVID-19 pandemic caused by the SARS-CoV-2 has triggered intense scientific research into the possible therapeutic strategies that can combat the ravaging disease. One of such strategies is the inhibition of an important enzyme that affects an important physiological process of the virus. The enzyme, Guanine 7 Methyltransferase is responsible for the capping of the SARS-CoV-2 mRNA to conceal it from the host’s cellular defense. The study aims at computationally identifying the potential natural inhibitors of the SARS-CoV-2 GuanineN7 methyltransferase binding at the active site (Pocket 41). A library of small molecules was obtained from edible African plants and were molecularly docked against the SARS-CoV-2 Guanine-N7 methyltransferase (QHD43415_13. pdb) using the Pyrx software. Sinefungin, an approved antiviral drug which had a binding score of -7.6 kcal/ mol with the target was chosen as a standard. Using the molecular descriptors of the compounds, a virtual screening for oral availability was performed using the Pubchem and SWISSADME web tools. The online servers PKCSM and Molinspiration were used for further screening for pharmacokinetic properties and bioactivity respectively. The molecular dynamic simulation and analyses of the Apo and Holo proteins was performed using the GROMACS software on the Galaxy webserver. The lead compounds are Crinamidine, Marmesin and Sinensetin which are obtained from waterleaf, mango, and orange plants respectively. All the lead compounds performed better than the standard. Crinamidine is predicted to show the greatest inhibitory activity. Further tests are required to further investigate the inhibitory activities of the lead compounds.

As plantas alimentícias não convencionais (PANC) oferecem a oportunidade de superação de desafios que se impõem aos sistemas alimentares. Todavia, a escassez de dados sobre essas plantas e as lacunas encontradas na formação em Nutrição são gargalos que dificultam sua abordagem. Para abordar alguns desses limites, um projeto de horta comunitária foi desenvolvido em um curso de graduação em nutrição em uma universidade federal do nordeste do Brasil. Este artigo tem como objetivo apresentar os resultados obtidos com esta iniciativa em seus primeiros doze meses com o uso do método Aprendizagem Baseada em Hortas (ABH). Durante 2018, oito plantas foram estudadas. Os dados coletados sobre PANC pelos alunos incluíram: família botânica, nomes populares, origem, bioma de ocorrência, usos alimentícios e indicadores nutricionais. O uso da ABH envolveu algumas estratégias, tais como definição de tema, elaboração de um produto de culminância e promoção da pesquisa em múltiplas bases de evidência. O método ABH mediou o processo educacional implicado com conceitos, práticas e atitudes. As plantas estudadas têm potencial para contribuir com a Segurança Alimentar e Nutricional, devido a alguns critérios, como adequação ao bioma do ambiente de estudo e variedade de nutrientes. Reconhecer plantas alimentícias nativas e adaptadas, resilientes à paisagem da Caatinga, é essencial para melhorar a saúde ambiental e humana neste bioma. Os dados resultantes da experiência de ensino serviram de base para ações de promoção de dietas sustentáveis junto à comunidade inserida no projeto, por meio de conversas e atividades práticas na horta e oficinas culinárias.DOI: 10.12957/demetra.2020.44037
