The belief that xylitol can remineralise enamel subsurface lesions by forming calcium complexes is still apparent in the more recent literature [31][32][33] although unequivocal evidence to support the claim is still lacking. The concentrations and conditions used by Makinen and Soderling [21] to define extremely weak calcium-polyol complexes are not physiologically relevant and cannot be extrapolated to the conditions in saliva upon release of the polyols on gum chewing which produce much lower peak salivary concentrations for only a few minutes.…”
