Polysaccharides systems for probiotic bacteria microencapsulation: mini review

Felipe CAMPOS-ESPINOZA,
Johanna CASTAÑO-AGUDELO,
Saddys RODRIGUEZ-LLAMAZARES

Abstract: Probiotic bacterial encapsulation systems have proven useful in protecting the bacteria from gastric acids, bile salts and other drastic conditions present in the gastrointestinal tract. In addition, daily intake of probiotic products has shown positive therapeutic effects on gastrointestinal and autoimmunity problems. Polysaccharides have aroused great interest in probiotic food applications due to their non-toxicity, biocompatibility, and the fact that they can be digested by enzymes in the gastrointestinal … Show more

“…Other authors believe that the action of substances that contain polysaccharide dominant, including pectins, is based on the specificity of carbohydrate-carbohydrate and carbohydrate-protein interactions on the surface of cells. The peculiarity of the structure of pectins, unique biological functions, and a wide range of physiological activity attracts the attention of researchers [8][9][10][11][12] Many years of research have shown that pectin polysaccharides of higher plants have growth-promoting activity concerning crops [13,14].…”
