Industrial potential of Bacaba (Oenocarpus bacaba) in powder: antioxidant activity, spectroscopic and morphological behavior

Abstract: The objective of this research was to analyze the industrial potential of a bacaba powder (Oenocarpus bacaba) obtained by different drying methods, evaluating antioxidant activity, spectroscopic and morphological behavior and addition to the composition of inorganic elements. The content of anthocyanins, flavonoids and carotenoids of each powder were determined as well as the total phenolic compounds. The structure of the granules of the powder were visualized via scanning electron microscopy (SEM) and the ele… Show more

“…These results showed a large range of TPC, while other studies in China found the CLP extract reached 262.09 mg GAE/g, which indicates better antioxidant activity (Jiang et al, 2009). According to a study, the TPC of bacaba in powder was 290.93 mg GAE 100g (Santos et al, 2022). The major antioxidant components of these common foods are the phenolic compounds.…”

“…The study by Alves et al [ 105 ] demonstrated that the co-products from the açaí pulp can be an important source of fiber and antioxidant compounds. In addition, Santos et al [ 106 ] pointed out that the bacaba powder obtained through a freeze-drying technique has a wide concentration of antioxidant components with bioactive properties, which allows its application in different industrial sectors.…”

“…For the content of total phenolic compounds (TPC), a range of 250 to 1750 mg of gallic acid equivalent (GAE) per 100 grams of dry weight has been quantified in the pulp, with the variation depending on the degree of maturation, place of cultivation, variety, pre-treatment of raw material, solvent and extraction process. 20,54,55,76 This amount was similar or higher compared to wild fruits such as bacuri (Platonia insignis Mart.) (266 mg GAE per 100 g), buriti (Mauritia vinifera Mart.)…”

“…53,54 Bacaba emerges as a potential market option, having a long and productive harvest, which is a particularly attractive feature. 44,55 Regionally, bacaba pulp assumed an important role as an açaí (Euterpe oleracea) pulp replacer, even competing with this well-stablished fruit product, mainly due to the intermittent process of harvest. 55,56 Açaí is a berry, also native to the Amazon region, well known and consumed in Brazil, North America, Japan, Australia, and Western European countries, and recommended for its antioxidant capacity and its various health benefits.…”
