Effects of pre-slaughter fasting on broiler welfare, meat quality, and intestinal integrity

Abstract: The Brazilian Ministry of Agriculture (MAPA) regulations establish 12 hours as the maximum pre-slaughter fasting period for broilers; however, many processing plants have considered this time is not sufficient, and consequently return the birds to the farms, with consequent economic losses and welfare problems. Therefore, it is necessary to investigate the possible effects of longer pre-slaughter fasting times. The objective of the present study was to evaluate the effect of pre-slaughter fasting times longer … Show more

“…It has been reported that when L*>53, the meat color tends to be lighter, 48<L*<51 indicates that meat color is normal and L*<46 implies that meat color tends to be dark [ 26 ]. According to previous report, shading and uniformity of meat color are primarily determined by content, distribution and chemical state of myoglobin and hemoglobin, pigment substances in muscle [ 25 ], Moreover, it also relates to light refraction, scattering and absorption within a muscle fibre [ 25 , 27 ]. Our study showed that the length of fasting had no significant impact on meat color a* and b* value of broilers, which concides with the results of Pereira et al [ 27 ].…”

“…In the rest of the world, the number of hours of preslaughter fasting for animal species is variable according to the legislation of the individual countries. A preslaughter fasting period of 12 h is stipulated as the minimum time for cattle and as a maximum for broilers by the regulations of the Brazilian Ministry of Agriculture [19,20]. Prolonged feed deprivation has a negative influence on certain characteristics of meat quality and increases physiological stress parameters in lambs; for this reason, fasting for more than 24 h is not recommended [21].…”

“…When the fasting exceeds 12 hours, FTOTAL can cause intestinal rupture due to intestinal mucosal wear [42]. Thus, reductions in FFARM may result in increased broiler welfare during subsequent stages and a better final slaughter yield [44]. In contrast, FTOTAL less than 8 hours does not allow adequate emptying of the gastrointestinal tract [45], and crop rupture can occur due to the presence of excess food [46].…”
