“…Coutinho et al (2007), ao estudarem as feiras de Solânea e Bananeiras na Paraíba, concluíram que as carnes comercializadas são oriundas de abatedouros clandestinos, expostas e comercializadas sob condições precárias de higiene, e manipuladas por comerciantes que negligenciam a higiene pessoal e as boas práticas de manipulação. De acordo com Minnaert & Freitas (2010), para os comerciantes, o mais importante é manter a organização dos produtos como vitrines para a venda, onde limpo e sujo têm lugares particularizados, e a qualidade dos alimentos não está associada às suas condições de conservação, mas às características detectáveis, principalmente pela imagem e pelo cheiro do produto. Ainda segundo as autoras, as racionalidades sobre os riscos para a saúde geram uma concepção sobre a feira que afeta a tradição, as crenças e interfere na significação da higiene como uma prática social, na qual o familiar e o estranho justificam as práticas de higiene e sustentam as noções sobre sujo e limpo.…”
