RESUMOA quantidade de pessoas que consomem alimentos fora de casa cresce cada vez mais, resultado das mudanças socioeconômicas ocorridas nos últimos anos. Garantir a segurança dos alimentos tem sido discutido tanto pelos comensais como por profissionais capacitados e estudos sobre as condições higiênicas e práticas de manipulação e preparo de alimentos são favoráveis. O objetivo principal foi verificar a situação atual dos restaurantes em relação às Boas Práticas de Manipulação. Trata-se de uma revisão integrativa de literatura realizada na base de dados LILACS e SCIELO, utilizando como descritores boas práticas de manipulação; higiene; restaurante. Foram inclusos artigos publicados em periódicos no período de 2012 a 2016, artigos completos captados gratuitamente; textos disponíveis no idioma Português, Espanhol e Inglês, e excluídos dissertações, teses, monografias bem como artigos científicos repetidos. A busca resultou em 102 artigos, e após os critérios de exclusão restaram 11 artigos. De modo geral os restaurantes nos últimos cinco anos estão realizando boas práticas de manipulação, prevenindo o público de doenças causadas por alimentos contaminados, porém ainda precisam melhorar o aspecto higiênico. Vale ressaltar que esses métodos de higiene quando são supervisionados por técnicos como nutricionistas, são executados corretamente. Foram encontrados nas revisões de literatura alguns tipos de bactérias como Citrobacter spp, Klebsiella spp, Enterobacter spp e Pseudomonas spp que acometeram as preparações nos restaurantes analisados. Dessa forma, é importante que os restaurantes possam garantir higiene sanitária adequada, preservando a saúde dos clientes uma vez que isso pode proporcionar também benefícios, como o reconhecimento qualificado do ambiente.Palavras chaves: Segurança alimentar.
