Valor nutricional de cogumelos comestíveis

Abstract: ResumoO objetivo desse trabalho foi avaliar e comparar a composição centesimal, teor de ácido ascórbico, fibra alimentar e fósforo dos cogumelos mais cultivados no Brasil (Agaricus bisporus, Lentinula edodes e Pleorotus spp.).
