There has been a growing demand for products from organic agriculture for the food market. Brazil leads the production of sugarcane spirits and produces about 1.6 billion liters/year. New technologies have been sought throughout the supply chain to improve production, and organic raw material has been used in the production of sugar cane for the production of beverages. This study aimed to define the physicochemical and chromatographic profiles of eleven organic sugarcane spirits samples from various Brazilian states. The secondary components and contaminants were identified and quantified through physicochemical analyses, HPLC and gas chromatography (GC). A significant percentage of the organic sugarcane spirits samples contained concentrations of components that were above the limits required by the Ministry of Agriculture, Livestock and Provisioning (MAPA), specifically the esters (18.20%), copper and dry extract (9.10%). This contamination is caused by bad conditions employed during the production process, which are not in compliance with the good manufacturing practices determined and legislated by Brazilian law. RESUMO-Ultimamente, no mercado de alimentos vem crescendo a demanda por produtos provenientes da agricultura orgânica. O Brasil lidera a produção de cachaça e produz cerca de 1,6 bilhões de litros/ano. Para a melhoria do produto, tem-se buscado novas tecnologias em toda a cadeia produtiva e utilizado matéria-prima orgânica na produção de cana-de-açúcar para a obtenção da bebida. O presente trabalho teve por objetivos traçar o perfil físico-químico e cromatográfico de onze amostras de cachaça orgânica provenientes de alguns estados brasileiros. Foram identificados e quantificados os componentes secundários e contaminantes por meio das análises físico-químicas, cromatografia líquida de alta eficiência (CLAE) e análises cromatográficas em fase gasosa (CG). Pelos resultados encontrados observou-se um percentual significativo das cachaças orgânicas pesquisadas, onde estas apresentaram parâmetros fora dos limites exigidos pelo Ministério da Agricultura, Pecuária e Abastecimento (MAPA), sendo encontrado valores inadequados de 18,20% para ésteres, 9,10% para cobre e extrato seco. Esta contaminação é acarretada pela má condução durante o processo pelos produtores, onde não estão observando as boas práticas de fabricação determinadas e/ou normatizadas pela legislação brasileira. Cachaça is the popular name of sugarcane liquor obtained from fermented sugarcane mash broth. This is one of the most popular alcoholic beverages in Brazil and is gaining ground in the global market. One of the quality parameters established by Brazilian law is the sum of the concentrations of furfural and hydroxymethylfurfural, two compounds that give the beverage an unpleasant taste and have mutagenic potential. These two substances are usually determined by chromatographic techniques that employ toxic organic solvents that can be damaging to the health of the operator and to the environment. This paper describes the development of a new methodology to determine furfural and hydroxymethylfurfural in sugarcane liquor using a diffuse reflectance technique coupled with limited-area spot-testing on a paper platform. The new method presented LOQ values of 0.74 mg L −1 for furfural and 1.27 mg L −1 for hydroxymethylfurfural. Recoveries in the ranges 89.5-108% (furfural) and 96.3-106% (hydroxymethylfurfural) indicated that there was no significant influence of the matrix in determination of the analytes. The method was applied using eleven sugarcane liquor samples from different locations in Brazil.

ABSTRACTThis work presents a study of the Time-Domain Reflectometry -TDR technique for ethanol fuel qualification. There is a great interest in fuel qualification since adulteration is a common practice, which brings harmful consequences to the vehicle motor functioning, besides causing higher environmental pollution and tax evasion.The present study is focused on the qualification of ethanol adulterated with water, by using a commercial probe and probes developed in this work. It was divided in three steps: the first step has confirmed the viability of the technique for the proposed theme using a commercial sensor Vegetronix VG400 for soil moisture analysis. The second step was the simulation of bifilar, microstrip, coaxial and helical probe geometries using a 3D eletromagnectics software, leading to the optimization of the probe for fuel qualification. The last step was the fabrication of the simulated probes and the test of their performance into alcohol adulterated with various proportions of water. This study showed that the helical probe, an original proposal of this work, presented higher sensibility among the chosen models. Its response variation between pure alcohol and pure water was 12.5% greater than the bifilar probe, which was the second most sensitive sensor among the studied geometries.
