Compuestos volátiles libres y enlazados glicosídicamente en la pulpa de la uva Caimarona (Pourouma cecropiifolia Mart.)

Abstract: RESUMENLos componentes volátiles presentes en la pulpa de la uva Caimarona se estudiaron mediante GC-MS. Éstos se extrajeron por tres técnicas: evaporación del aroma asistida con solvente (Solvent Assisted Flavour Evaporation SAFE), extracción continua líquido-líquido (LL) y destilación por arrastre con vapor-extracción simultanea con solvente orgánico (DES).
