Comportamento higroscópico de partes aéreas de pimenta-de-macaco (Piper aduncum L.)

Abstract: A B S T R A C TDesorption isotherms of monkey pepper were determined by static gravimetric method at temperatures 35, 45, and 55 ºC, over a relative humidity range of 5.5-81%. Three mathematical models were applied to analyse the experimental data. The modified GAB model showed the best adjustment of the experimental data. The isosteric heat and differential entropy were determined by applying Clausius-Clapeyron and Gibbs-Helmholtz equations, respectively. The isosteric heat and the entropy of desorption isoth… Show more

“…Since the first condition was found here, the water sorption mechanism of rice in the husk is enthalpy controlled. This result is in agreement with those found by several researchers (Goneli et al, 2013;Martinez-Monteagudo & Salais-Fierro, 2014;Nicoleti et al, 2015;Silva et al, 2015;Oliveira et al, 2017).…”

“…Applying the compensation theory implies that only one reaction mechanism is followed by all members of the reactive series, and the existence of a single mechanism suggests that the food microstructure is stable and does not undergo any change during moisture sorption (McMINN et al, 2005). These results are in agreement with several researchers who have applied the isokinetic theory to sorption in several products, concluding that the sorption phenomenon is controlled by enthalpy (CLADERA-OLIVEIRA et al, 2008;GONELI et al, 2013GONELI et al, , 2016MARTINEZ-MONTEAGUDO;SALAIS-FIERRO, 2014;MOREIRA et al, 2008;NICOLETI et al, 2015;SILVA et al, 2015;VEGA-GÁLVEZ et al, 2014;TUNÇ;DUMAN, 2007).…”

“…The isokinetic temperature for water desorption was 520.91 K, ranging from 563.58 to 478.25 K. The calculated harmonic mean was 297.73 K, which was different from the described isokinetic temperatures, confirming enthalpyentropy compensation and showing that enthalpy controls the process. These results are in line with those of other studies by several researchers, who used the isokinetic theory for different agricultural products (Oliveira et al, 2014;Sousa et al, 2015;Silva et al, 2015;Resende et al, 2017;Corrêa et al, 2017).…”
