Aim. To determine the toxicity of marine waters area " tuleniy ". Location. Area " tuleniy " Methods. Determining the level of toxicity of marine waters area "seal" method for biological testing was conducted according to the guidelines approved by the Ministry of natural resources (guidance on the definition of ..., 2002; Dolzhenko, 1978). Guide prepared by the Center for Russian register of hydraulic structures and the state water cadastre of the MNR of Russia jointly with specialists of the Institute Committee of Russia and the UNION of ecological problems of the Ministry of Ukraine. The basis of the proposed system of marine toxicity biotests based on the results of generalization of experimental research based on the problem of pollution of water bodies and numerous literature data, making it possible to identify features of the response of aquatic organisms of different taxonomic groups to toxic impurities of different nature and origin. Experimental studies were conducted on the culture of marine unicellular algae Phaeodactylum tricornutum on planktonic crustacea Acartia tonsa, the larvae of the chironomid Chironomus gr. salinarius and juvenile guppies Poecillia reticulata Peters. Results. Comparative analysis of the results of research from 2001 to 2006 showed no acute toxic effect on the test object zooplankton and phytoplanton. Main conclusions. Throughout the study period (2001-2003, 2005-2006), you must allocate the spring of 2002, when it was recorded, the average of the lowest five years of research, the level of toxicity of water for the analyzed area.Considering the results of biological testing of the surveyed area by periods, it should be noted that the average level of toxicity of the waters did not undergo significant changes and were on the same level, not exceeding 17,6% (table. 1). According to the classification shown in table 2, the water in the surveyed area is assessed as "non-toxic".
Проведено исследование по определению гигроскопических параметров и их термодинамического анализа для рациональной организации процесса сушки водорастворимых антоциановых комплексов, выделяемых из плодово-ягодного сырья, в частности плодов черного тута (шелковицы). Гигроскопические характеристики и равновесная влажность водного тутового экстракта находились при использовании тензометрической методики Ван Бамелена. Термодинамический анализ гигроскопических параметров проводился на основе классического уравнения Гиббса-Гельмгольца. Определены гигроскопические параметры и проведен их термодинамический анализ для рациональной организации процесса сушки водорастворимых антоциановых комплексов, выделяемых из плодово-ягодного сырья, в частности тутового экстракта. Проведена оценка варьирования энергии связи влаги с сухим веществом на различных стадиях сушки. В пределах изменения влажности 0,02 ≤ W p ≤ 0,07 микробиологическая и ферментативная активность минимальна, и поэтому ее величину, равную 0,07 принимают за итоговую для хранения Полученные данные и их зависимости от влияющих факторов можно использовать при конструировании и проектировании процессов обезвоживания сушильного оборудования.Ключевые слова: натуральные красители, плоды черного тута, гигроскопические характеристики, изотермы сорбции, термодинамический анализ, тепломассоперенос, сушка.
При ультразвуковом (УЗ) облучении растительного сырья происходит рост температуры, и при выходе ее значений за пороговые возрастает вероятность деструкции антоцианов и утраты необходимых потребительских показателей сырья. Поскольку экспериментальное определение изменения температурного поля в частице водной суспензии практически невозможно, проведен численный эксперимент с использованием адаптированной математической модели переноса тепловой энергии и вещества в объекте исследования – суспензии выжимок плодов черной шелковицы при определенных краевых условиях. Для оценки адекватности решения модели переноса тепловой энергии, которая построена для усредненной частицы, выполнена серия опытов для нахождения изменения температуры в зависимости от продолжительности УЗ-воздействия на суспензию. Исследования осуществляли на лабораторном стенде с использованием программного продукта ThermoChart. Уравнение переноса тепловой энергии решено методом конечных разностей. Найденное распределение температуры по объему частицы показывает, что продолжительность УЗ-воздействия не должна превышать 9 мин. Построенная и адаптированная к объекту исследования модель переноса тепловой энергии является адекватной и может применяться для инженерно-технических расчетов установок с ультразвуковой обработкой сырья. With ultrasonic (US) irradiation of plant raw materials the temperature increases, and when its values exceed the threshold the probability of destruction of anthocyanins and loss of the necessary consumer indicators of raw materials increases. Since it is practically impossible to determine experimentally the change in the temperature field in a water suspension particle, a numerical experiment using an adapted mathematical model of heat energy and substance transfer in the object of study – a suspension of black mulberry fruit pomace under certain boundary conditions was carried out. To assess the adequacy of the solution of the thermal energy transfer model, which is constructed for an average particle, a series of experiments to find the temperature change depending on the duration of US-action on the suspension was performed. The research was carried out on a laboratory stand using the ThermoChart software product. The thermal energy transfer equation was solved using a numerical finite difference method. The found temperature distribution over the particle volume shows that the duration of US-action should not exceed 9 min. The model of heat energy transfer constructed and adapted to the object of research is adequate and can be used for engineering calculations of installations with US-processing of raw materials.
