Results of studies of dry milk based mixtures for extremal nutrition, obtained by spray drying at various temperatures are presented. Viable cells number, sensorial, physical and chemical parameters are determined. The increase of dry whey protein concentrate (WPC) content from 1% to 6% leads to an increase in the protein content in the product from 25% to 37%. At the same time, the relative rate of dissolution increases by 2.7 times, and the active acidity decreases by 0.16 pH units. It is established that the drying temperature of the mixtures is 130 ± 2 °C at the inlet of the drying tower and 60 ± 2 °C at the outlet, can be is recommended for maximum preservation of the viability of probiotic microorganisms. Streptococcus thermophilus strain turned out to be the most resistant to elevated drying temperatures in comparison with other strains. It is noted that the introduction of WPC effected the survival of probiotic bacteria to survival during drying and storage positively. The smallest losses of viable microorganisms after drying the product were found in test samples with strains of Streptococcus thermophilus and Enterococcus faecium and addition of WPC to the product formulation, while the number of viable cells decreased by 1.7 times and 2.1 times, respectively. It was shown that during 18 months of storage, a high rate of viable cells was for the Enterococcus faecium strain and the addition of WPC and barley malt extract (BME) to the samples, where the losses were 11.8% and 11.9%.
Мета. Провести дослідження жирнокислотного складу та фізико-механічних показників сухих багатокомпонентних сумішей на основі молочних складових. Методи. Визначення жирнокислотного складу проводили методом капілярної газорідинної хроматографії, фізико-механічні показники визначали за стандартизованими методами. Результати. Встановлено, що використання соняшникової олії позитивно впливає на жирнокислотний склад, органолептичні та фізико-механічні показники сухих сумішей. Визначено, що внесення в сухі суміші соняшникової олії 2.5 % призводить до збільшення в них масової частки жиру на 57 %, зменшення гігроскопічності на 7.1 %, зростання насипної щільності на 41.7 % у порівнянні з контрольним зразком без рослинної олії. Відзначено, що доза рослинної олії не впливає на показники розчинності та активної кислотності продукту. Висновки. Встановлено, що внесення рослинної олії у кількості 1.5 % та 2.5 % помітно змінює баланс жирних кислот у сторону поліпшення харчової цінності продукту, про що свідчить співвідношення НЖК (ненасичених) : МНЖК (мононенасичених) : ПНЖК (поліненасичених) жирних кислот. Доза внесення соняшникової олії 1.5 % дозволяє отримати найбільш високий коефіцієнт, який характеризує біологічну ефективність жирів продукту.
Мета. Застосування інноваційних підходів щодо визначення фруктози із використанням резорцинового методу для контролювання якості у молочних продуктах з комбінованим вуглеводним складом. Методи. Визначення вмісту фруктози проводили резорциновим методом з використанням фільтратів, отриманих за різних способів осадження продукту: сульфосаліциловою кислотою; трихлороцтовою кислотою; розчинами для поляриметричного методу із руйнуванням лактози. Результати експериментальних даних обробляли методами математичної статистики. Результати. Встановлено, що за спектрами поглинання продуктів реакції фільтратів, отриманих різними способами пробопідготовки, у видимій області спектра максимум поглинання складає λmax = 415–420 нм. Виявлено, що значення масової частки фруктози у фільтратах, отриманих осадженням продукту розчинами для поляриметричного методу із руйнуванням лактози, корелюють між собою, а саме, значення абсолютної похибки порівнюваних результатів становить 0.02 і 0.03 %, а відносної похибки – в межах 0.6–0.73 %.
