Aim. The article deals with the study of technological approaches to the quality and development of a functional fermented milk product for specialized sports nutrition. Materials and methods. Skim milk, whey protein concentrate, and starter cultures (DELVO-YOG®, DIRECT SET) were used for the study. Bifidobacteria (Bifidobacterium animalis) were introduced as a probiotic. Creatine monohydrate (Creatine Powder C4N9O2N3, USA) was used as an element of sports nutrition. The fruit fillers (“Green Apple”, “Blueberry”, produced by “Zuegg”, Italy) were also introduced into the product. The research was conducted using standard and original methods, mathematical modeling, and statistical processing of experimental data. Results. The obtained data on the physiological effects of proteins, fats, carbohydrates, and nutrients, enhancing the adaptive capacity to the physical and neuro-emotional stress, indicate the need for their use in the technology of specialized food for athletes. Technological approaches to the quality of a functional fermented milk product for sports nutrition were studied. Based on a combination of milk, whey protein concentrate, starter cultures, and bifidobacteria, a fermented milk product was designed. This product is intended for athletes during training, competition, and recovery. The introduction of creatine monohydrate into the milk base allowed enriching the product with amino acids. Conclusion. This study is of great interest in terms of getting yogurts with the textural properties similar to the traditional ones but with the use of functional ingredients. The study also contributes to the development of food technologies and products for sports nutrition.
Introduction. Many strains used in dairy industry are antagonists of harmful microflora. Logically, a successful combination of several cultures can enhance the bactericidal effect. The present research objective was to develop a fermented milk drink using a prebiotic to stimulate a multicomponent starter culture. Study objects and methods. The research featured pure strains of Bifidobacterium bifidum strain No. 791 and Lactobacillus acidophilus (VZ-AP), as well as Bio-fi Pro WR 400 beet fiber. The study involved standard and conventional research methods. Results and discussion. The first stage defined the optimal ratios of B. bifidum and L. acidophilus for a two-component starter culture, as well as the optimal production method and their antibiotic activity. The second stage featured the functional and technological properties of the prebiotic beet fiber and its effect on the development of microorganisms in the starter. The study resulted in the main production parameters and a technological scheme for the production of fermented dairy product. Conclusion. The paper introduces a new technology for production of a functional fermented milk product fortified with probiotics and prebiotics, as well as approved technical documentation. The new functional fermented dairy product was based on a starter culture that combined a liquid concentrate of B. bifidum strain No. 791 and a starter culture of L. acidophilus (VZ-AP). The optimal ratio of microbial cultures was 5:1, respectively. The starter strain proved to have a high antibiotic activity. Prebiotic beet fiber Bio-fi Pro WR 400 could be recommended as a product stabilizer at the optimal amount of 0.7% by weight of standardized milk.
The person of Boris Grintchenko as the worker on cultural, educational and social field and the popularizer of the national upbringing and national education and the bright representative of the Ukrainian national elite of the end of 19-th – the beginning of 20-th centuries is studied in the article. The study of the main ideas of the outstanding scientist and publisher B. Grinchenko allows you to appeal to the authority of the past, gives you the opportunity to find support in the Ukrainian tradition of moral and aesthetic development based on the best achievements of ethnic pedagogy. In connection with the recent events in our country, more attention was paid to the problems of upbringing. Therefore it is so important to appeal to the richest heritage of the teachers of the past, and B. Grichenko, in particular, because he saw the main goal of his life in the awakening of national selfconsciousness. The main lines that reveal the emergence of B. Grinchenko as a representative of the Ukrainian national elite are: 1) the influence of the family environment in which the scholar was brought up; 2) the historical conditions in which B. Grinchenko lived; 3) sociocultural and spiritual and philosophical development of the scientist during life; 4) preserving their own Ukrainianness and national identity; 5) the presence of a significant contribution to the development of Ukraine; 6) the combination of one’s fate with that of Ukraine. The article deals with the historiographical traditions in the study of the figure of Boris Grinchenko. Separated the main stages of historiography concerning studies of the B.D. Grinchenko`s figure emphasizing on the modern stage of development of the problem based on the methodology, problematic - thematic content and the source base. Suggested further development of the study of the problem.
