The fundamental direction of modern agriculture development is elaboration and utilization of technologies that ensure environmental safety, high plant productivity and quality of crop production. In this connection, the issues of optimization of mineral nutrition and water supply, immunity enhancement and protection of plants against various forms of biotic and abiotic stresses without significant environmental stress are of current interest. Normal growth and development of almost all plants on the Earth depends on the presence of mycorrhizal fungi in the soil, which ensure optimal plant nutrition and water supply due to the huge number of hyphae. The review discusses the prospects for the use of arbuscular mycorrhizal fungi in the cultivation of Allium species, as the most responsive plants to the effects of mycorrhizae due to the poorly developed root system that hinders the nutrition of plants. It is noted that utilization of arbuscular mycorrhizal fungi may provide the reduction of the amount of fertilizers, herbicides and insecticides needed for high productivity of crops. The review deals with the peculiarities of symbiotic interrelations of different species of mycorrhizal fungi (pure and mixed cultures, mainly of the genus Glomus) with different Allium species (onion, garlic, shallot, leek, A. roylei, A. fistulosum, A. galanthum). Questions of agricultural crops quality as affected by arbuscular mycorrhizal fungy are discussed. Data on the effect of climatic conditions on the efficiency of arbuscular mycorrhizal fungi utilization in Allium production are discussed. The possibility of increasing the efficiency of biofortification of Allium species with selenium via utilization of arbuscular-mycorrhizal fungi is noted, as well as an increase in the content of biologically active sulfur-containing compounds in garlic. Particular attention is paid to the necessity of the development of arbuscular mycorrhizal fungi preparations in Russia – the country not using this ecologically friendly technology at present.

Relevance. Production of functional food with high levels of antioxidant status and selenium is essential for human protection against viral and cardiovascular diseases as well as cancer.Methods. Evaluation of the efficiency in foliar sodium selenate biofortification (25. 50 and 75 mg Se/L) was achieved on three chervil genotypes.Results. Intervarietal differences in biofortification level was demonstrated: from 15.5 to 31.1 for 25 mg Se/L dose; from 36.9 to 64.6 for 50 mg Se/L dose; and from 72.9 to 130 for 75 mg Se/L dose. At the chosen doses, selenium supply did not affect significantly the yield, antioxidant properties and photosynthetic content of chervil. Total antioxidant activity was in the range from 30 to 42 mg GAE/g d.w., phenolics content from 9 to 13 mg GAE/g d.w, flavonoids from 5 to 12 mg-eq quercetin/g d.w., ascorbic acid from 33 to 66 mg/100 g fresh w. High levels of carotene were a typical feature of Se fortified and non-fortified chervil. A direct correlation was recorded between phenolics content and total antioxidant activity (r=+0.954, P<0.01), and between water soluble compounds and nitrates accumulation (r=+0.920, P<0.01). Biofortification with selenium did not affect significantly the mineral content of plants. Consumption of 100 g of fresh chervil leaves, fortified with selenium, provides from 50 to 75% of the adequate selenium consumption level and from 16 to 20% of potassium. Taking into account that both selenium and potassium normalize heart activity, the new functional food product may be recommended for prophylactics and treatment of cardiovascular diseases and for the human selenium status optimization.

Пищевая ценность салатного лука крымской селекции РЕЗЮМЕ Актуальность. Лук репчатый (Allium cepa) является одной из наиболее важных овощных культур в большинстве стран мира. Высокая пищевая ценность особенно выражена в луках салатного направления, выращивание которых требует высоких температур и значительной инсоляции. Материал и методика. В работе впервые приведены данные биохимического состава 9 сортов и сортообразцов салатного лука Крыма (красные Фестивальный, Ялтинский плюс, Ялтинский форос, Ялтинский рубин, Ялтинский 6А, Ялтинский 7А, Ялтинский 8А и желтые Кендли и Bean promine) в сравнении с популярным в Италии салатным луком Tropea и полуострыми сортами селекции Федерального Научной Центра Овощеводства, выращенными в Московской области, Италии и Ставропольском крае (Золотничок и Черный принц). Результаты. Установлено, что теплый климат Средиземноморья способствует более интенсивному накоплению полифенолов, флавоноидов и высокой общей антиоксидантной активности, а также органических кислот при достоверном повышении доли моносахаров от общего количества сахаров. По сравнению с итальянским сортом Tropea крымские сладкие сорта лука характеризуются более высоким содержанием витамина С (12.8±1.4 мкг/100 г сырой массы) и сходными уровнями накопления полифенолов (21.0±2.3 мг-экв ГАК/г с.м.), кверцетина (3.09±0.42 мг-экв ГАК/г с.м.) и антоцианидинов (2.78±1.03 мг/г сырой массы). Показано, что новые перспективные сортообразцы Ялтинский 6А, Ялтинский 7А и Ялтинский 8А отличаются повышенной антиоксидантной активностью. Установлена прямая корреляция между соотношением антиоксидантной активности в шелухе/луковице с соответствующим показателем для полифенолов (r=+0.93), а также прямая корреляция между содержанием флавоноидов во внутренних и внешних чешуях (r=+0.83). Показано, что соотношение уровней накопления полифенолов и флавоноидов в луковице и шелухе крымских луков достоверно выше, чем соответствующий показатель у подмосковных полуострых сортов, что предполагает перспективность использования шелухи крымских луков в производстве функциональных продуктов питания с повышенным содержанием антиоксидантов.
