У статті розглянуто важливість розв’язання питань розробки нових видів функціо- нальних продуктів, розширення асортименту оздоровчих виробів масового споживання, раціональ- ного використання м’ясної сировини. Розробка нових комбінованих м’ясопродуктів із такими функ- ціональними інгредієнтами, як м’ясо водоплавної птиці і бамбукова клітковина, дасть змогу досягти ефекту синергізму і, як результат, збільшення терапевтичного ефекту як м’ясної, так і рослинної сировини. Метою роботи було вивчення можливості заміни м’яса в рецептурі напівкопчених ковбасок «Мисливських» відповідною кількістю м’яса качки мускусної та впливу кількості доданоï гідратованоï бамбукової клітковини на функціонально-технологічні та органолептичні властивості готових виро- бів. У процесі досліджень встановлено, що повна заміна яловичини на м’ясо качки в рецептурі напів- копчених ковбасок не знижує фізико-хімічні та органолептичні якісні показники готового продукту. Визначено оптимальний ступінь гідратації бамбукової клітковини 1:3, який забезпечує високий рівень функціонально-технологічних і органолептичних показників нових виробів. Сполучення м’яса качки і бамбукової клітковини в розробленому співвідношенні дає змогу отримати фаршеві модельні системи і підвищити вологозв’язуючу здатність на 19,8%, вологоутримуючу здатність – на 32,35%, емульгу- ючі властивості – в середньому на 20%. Високі ФТВ розроблених фаршів забезпечують отримання якісних показників органолептичної оцінки готових виробів. Технологічні і медико-біологічні ризики, які присутні в технології нового продукту, залежать від контакту харчової системи із сонячним світ- лом, повітрям, порушенням терміну зберігання. Ці чинники зумовлюють погіршення органолептич- них властивостей продуктів та потенційно можуть сприяти деструкції корисних із фізіологічної точки зору нутрієнтів. Сполучення нових інгредієнтів, хімічні модифікації речовин під час зберігання створюють ризик окислювального псування. Тому подальші перспективи досліджень нового продукту полягають у застосуванні додаткових прийомів запобігання окисленню і пов’язаного з цим погіршення органолептики виробів.
