Glucose, warmebchandelt ReversionsproduktcMit der Bildung von Reversionsprodukten in sauren Losungcn vcrschiedener Kohlenhydrate haben sich schon viele hfitteilungen befaBt; die isolierten Produkte waren verschiedene Oligosaccharide oder deren Derivate.Bci dcr papierchromatographischen Isolierung der Kohbnhydratkomponenten des aus Glucose p. a. im Temperaturbereich 150-190 O C hergestellten Caramels -Papier Schleicher Schiill 2043 b ; Athylacetat/Pyridin/Wasser = 8: z : I als FlieBmittel; absteigende Technik; hilindiphenylamin-Phosphorsaure als Spruhmittelwurden die Flecke von 3 Verbindungen wahrgenommen, die Iangsamer uanderten als die Glucose. Mittels der Cellulosesaulen-Chromatographie -Schleicher Schullzo43 Cellulosepulver; Butanol/Athanol/Wasser = 52.5: Z~: Z O als Elutionsmittelgelang es, von ca. 2 g Caramel ausgehend, die einzelnen Reversionsprodukte in einer Menge von etwa 100 mg rein darzustellen. Diese Reversionsprodukte sind farblose, schwer kristallisierbare, auBerst hygroskopische Substanzen. Mit 0.1 m-Schwefelsaure wurden die Reversionsprodukte bei IOO OC in 4 h vollstandig zu Glucose h ydrolysiert.Durch Oxydation mit Hypojodid wurde die Menge der freien Aldehydgruppen der einzelnen Reversionsprodukte bestimmt. Es zeigte sich, daB im am raschesten wandernden Produkt auf z Glucoseeinheiten eine, bei dem nachsten auf je I Glucoseeinheit I und beim dritten auf je 3 Glucoseeinheiten 2 freie Aldehydgruppen vorhanden sind.Gegenuber den anderen Zersetzungsprodukten -Hydroxymethylfurfurol, brauner Farbstoffist die Menge der erwahnten Reversionsprodukte verhaltnismaBig groB, wie dies die Bestimmung nach der Methode mit Phenolschwefelslure zeigte. Sie k6nnen evtl. auch d n c Rolle bei der Bildung des braunen Farbstoffes spielen.
