Otak-otak merupakan salah satu produk diversifikasi berbahan dasar ikan segar. Bahan baku yang digunakan dalam pengolahan otak-otak biasanya adalah ikan berdaging putih. Otak-otak merupakan produk modifikasi antara dua produk yaitu bakso dan kamaboko. Tujuan dari penelitian ini yaitu untuk mengetahui pengaruh penambahan tepung kacang merah (Phaseolus vulgaris L) dengan konsentrasi yang berbeda terhadap karakteristik organoleptik pada otak-otak ikan lele dumbo (Clarias gariepinus). Metode yang digunakan dalam penelitian ini yaitu metode eksperimen. Desain penelitian yang digunakan pada penelitian ini yaitu dengan menggunakan Rancangan Acak Lengkap (RAL) sederhana. Hasil penelitian menunjukkan bahwa fortifikasi tepung kacang merah yang berbeda pada produk otak-otak ikan lele dumbo berpengaruh nyata teradap karakteristik organoleptik kenampakan, aroma, rasa dan tekstur otak-otak. Hasil penelitian terbaik didapatkan oleh perlakuan C (fortifikasi tepung kacang merah 10%) dengan nilai hedonik kenampakan 3,48, hedonik aroma 3,29, hedonik rasa 3,37, dan hedonik tekstur 3,19. Semakin banyak tepung kacang merah yang difortifikasi dalam otak-otak ikan lele dumbo maka dapat menyebabkan penurunan tingkat kesukaan konsumen, kecuali pada organoleptik hedonik rasa. Terdapat perbedaan yang signifikan antar perlakuan fortifikasi tepung kacang merah pada otak-otak ikan lele dumbo. Fortifikasi dirasa sangat efektif sebagai salah satu bentuk rekayasa pengolahan hasil perikanan yang bermutu. Kesimpulan yang dapat diberikan dari hasil penelitian ini adalah tingkat fortifikasi terbaik didapatkan oleh perlakuan C dengan tingkat hedonik yang lebih baik dibandingkan perlakuan lainnya, dimana nanti tingkat hedonik ini akan berpengaruh pada senyawa organoleptik otak-otak ikan lele dumbo.
