A qualidade da matéria prima é o principal fator determinante para se produzir o açúcar cristal branco, e sua qualidade está diretamente relacionado a variedade da planta, condições de maturação e aos microrganismos presentes. O objetivo deste trabalho é destacar a importância do tratamento do caldo para a produção de açúcar, esse método consiste na clarificação do caldo, a fim de eliminar a maior parte das impurezas como terra, bagacilho, e compostos corantes que interferem diretamente na cor do açúcar. Dentre as operações unitárias mais utilizadas pelas usinas de cana de açúcar, destaca-se a técnica de sulfitação e calagem, pois é nessas etapas do processo que se obtenha lá na frente uma matéria prima ideal para a produção de açúcar cristal branco. Nesse estudo por meio de metodologia da pesquisa, foi possível compreender como funciona o processo de clarificação do caldo e a importância de um tratamento eficiente para que se obtenha um açúcar cristal branco de qualidade. E considerando que o processo de tratamento do caldo é uma etapa de fundamental importância para que se obtenha a maior eliminação de impurezas presentes no caldo, promovendo uma diminuição da viscosidade do caldo e contribuindo para as etapas de seguintes de evaporação e cozimento para a obtenção de um açúcar de alta qualidade.
