<em>Tofu is one of the most produced and consumed foods in Indonesia as a source of protein. At present, most of the tofu producers located in Indonesia are a home industry with simple equipment, especially in Banten. The production of tofu mostly produces solid and liquid wastes. However, the liquid waste contains high protein and amino acids that can pollute the environment if it is not treated properly. It is due to this waste has a high BOD, COD and TSS value. Therefore, the right method is needed in utilizing tofu liquid waste by tofu producers in Indonesia by biogas production. Biogas from liquid waste can be produced as methane or hydrogen. Tofu waste based biogas provided benefits from various aspects, such as environmental, economic, social and health aspects. On the other hand, tofu waste production can be one of the efforts to achieve the Sustainable Development Goals (SDGs) in Banten. It can be implemented to achieve clean water and sanitation points, as well as affordable and clean energy sources</em>
Kopi luwak adalah kopi bernilai tinggi dengan aroma dan rasa khas, yang dihasilkan dari biji kopi yang telah difermentasi sebagian dalam sistem pencernaan luwak (Paradoxurus hermaprodithus). Tingginya permintaan kopi ini dan produksi alami yang unik berimplikasi pada praktek pemaksaan dan penyiksaan hewan luwak, serta adanya kontroversi status kehalalan produk. Fermentasi in vitro menggunakan selulase, xilanase, dan protease yang diisolasi dari kotoran luwak tampaknya dapat menjadi alternatif proses untuk menghindari masalah pelecehan hewan, menjamin kehalalan produk serta memastikan keberlanjutan produksi kopi luwak. Kajian ini bertujuan untuk meringkas dan mensintesis peran tiga enzim ini (selulase, xilanase, dan protease) dalam fermentasi in vitro kopi luwak dan pengaruhnya pada karakteristik kimia dan sensori berdasarkan hasil-hasil penelitian terbaru. Hasil kajian menunjukkan bahwa fermentasi in vitro menggunakan selulase, xilanase, dan protease. biji kopi menghasilkan karakteristik kimia dan sensorik yang sama dengan yang dihasilkan melalui proses alami yang melibatkan hewan luwak.
Background; petai (Parkia speciosa) is a plant commonly grown and consumed in Southeast Asia, especially Indonesia, Malaysia, and Thailand. The main part of petai that is usually consumed is its seed, while the skin is removed, not used, and becomes waste. Objectives; to analyze 1) the potential for processing and utilizing petai skin waste (PSW) to be a source of antioxidants; 2) the antioxidant extraction process on PSW; 3) antioxidant activity, total phenol, and total flavonoids obtained from PSW; and 4) strategic steps for sustainability of PSW utilization. Materials and Method; this study used secondary data which obtained from literature review. Data was analyzed descriptively by describing and comparing the results of external research related to the utilization of PSW as an antioxidant source. Results; based on ethanol extraction results, PSW has higher antioxidant activity (250 mg/g) than the seeds and the leaf. Petai skin extraction process was carried out by solvent extraction method with various types of solvent. Antioxidant activity was determined by FRAP, ABTS, and DPPH method, while total phenol analysis was used Folin-Ciocalteu method and total flavonoid analysis using the colorimetric method. Based on the economic aspect, the utilization of PSW had a positive impact on the welfare of society, from the social aspect, the utilization of food waste could increase awareness, acceptance, and comfort for the community, from environmental and health aspects, waste utilization could reduce contamination and disease source. Conclusion; PSW had the potential as a source of antioxidants.
Marine tourism activities in small islands have an important role in the development of Indonesia maritime sector. This study aimed to estimate the economic value of marine tourism activities in Untung Jawa Island. Individual Travel Cost Method (ITCM) was selected to analyze the level of tourism demand of Untung Jawa. Samples were taken from three different season visits are weekday, weekend, and national holidays. The results showed the factors that have an effect on the level of tourist demand of Untung Jawa Island are travel cost, income, and distance to the location. The potential economic value of marine tourism Untung Jawa Island was IDR 68,505,101,600 with consumer surplus of IDR 397,592 per individual trip. This value is higher than the average of actual visitor expenditure which reached IDR 296,860 per individual trip. Tourism activity has a positive impact on economic conditions of local communities. The results of this study have provided useful information for sustainable management of marine resources.
Food contamination is not desired by producers or consumers. Safety factor is important in order to prevent side effects due to food contamination that can endanger health. Contamination in food occurs from small to large industries. Sanitation also plays an important role in many industries including the food industry. The research subject was a home industry of beans-based healthy drinks (BBHD), such as mung beans, soybeans, and red beanss drinks at Jukajo Sukses Mulia home industry in Tangerang Regency. This study was conducted to determine the level of security, sanitation, and sources of contamination in the BBHD industry Tangerang Regency. This study was carried out through observation and interview with the owner and the workers of Jukajo Sukses Mulia home industry. The result showed that the level of security and sanitation in the production environment was quite good. The potential source of contamination in the production process was the hygiene of the employees and the cleanliness of the production equipment. The critical control points were be located in filling, chilling, and storing processes. Total plate count value of mung beans, soybeans, and cashwes drinks were too numerous to count (TNTC), 3 x 103, and 2 x 102CFU/ml, respectively.
