RESUMO -Objetivou-se estudar o efeito das diferentes proporções de sangue Simental e Nelore sobre as características da carcaça e da carne de bovinos superprecoces. Foram utilizados 72 bovinos jovens inteiros (18 Nelore; 18 ½ Simental × Nelore;18 Simbrasil e 18 Simental), com 8 meses de idade e 250 kg PV médio inicial. Os animais foram desmamados aos 8 meses de idade em sistema creep-feeding e posteriormente confinados durante 150 dias até atingirem o peso de abate, acima de 465 kg, e abatidos em frigorífico comercial. Os valores de pH e temperatura durante o resfriamento das carcaças foi semelhante para todos os grupos genéticos. Da mesma forma, as variáveis carcaça fria, dianteiro e traseiro, não apresentaram diferenças entre os grupos genéticos. Os cortes foram bastante homogêneos, com excessão do contrafilé e do filé-mignon, que foram maiores nos animais Simental. Os animais da raça Nelore e ½ Simental apresentaram maior força de cisalhamento (4,98 e 4,45 kgf) em relação aos Simental e Simbrasil (3,13 e 3,33 kgf). No entanto, após a maturação da carne durante sete dias, não se constataram diferenças entre os valores de maciez entre os grupos. As perdas por evaporação e gotejamento foram maiores na carne in natura para os animais Simental e Simbrasil, no entanto, aos sete dias de maturação se tornaram semelhantes.O sistema de produção de bovinos superprecoces produz carcaças e cortes semelhantes entre as diferentes raças estudadas. RESUMO -Objetivou-se avaliar a influência do processamento grão de milho (inteiro, tratado com uréia ou moído na forma de quirera) sobre a digestibilidade de rações e no desempenho de bezerros desmamados precocemente e mantidos em regime de confinamento. A dieta foi formulada com silagem de sorgo como volumoso, em uma relação volumoso:concentrado de 40:60, na matéria seca. A digestibilidade in vivo da matéria seca (MS), matéria orgânica, proteína bruta, extrato etéreo, fibra em detergente neutro, fibra em detergente ácido, celulose, energia bruta e amido, o pH das fezes e o consumo de MS foram efetuados em um ensaio com seis bezerros, castrados, com sete meses de idade. A influência das dietas no desempenho dos animais foi avaliada em ensaio com 15 bezerros não-castrados e idades semelhantes aos do ensaio de digestibilidade, com peso vivo inicial médio de 159 kg. O processamento do grão de milho não influenciou as variáveis analisadas, exceto o pH das fezes, que apresentou valor mais baixo nos animais que receberam dieta contendo grão de milho moído. Digestibility of dry matter (DM), organic matter, crude protein, ether extract, neutral detergent fiber, acid detergent fiber, cellulose, gross energy and starch, fecal pH and DM intake were evaluated in an assay using six 7-mo castrated calves. Treatment effect on animal performance was evaluated in an assay using 15 non-castrated calves with ages similar to those of the digestibility assay, with initial 159 kg BW. -The objective of the present study was to evaluate the ruminal dynamics of dairy steer fed diets containing whole corn grains, grains ground into grits or whole grain treated with urea. Thus, six rumen-fistulated animals were kept in confinement and fed diets with similar contents of energy and protein. The diet was formulated with 40:60 roughage:concentrate ratio in the dry matter using sorghum silage as roughage. The experiments followed a 3 × 3 latin square design, with three animals and three periods and they were repeated eith-er two or four times depending on the studied parameter, totaling six or 12 replicates per diet. Corn grain treatment did not affect the pH of the ruminal fluid neither the ruminal degradability of dry matter, acid detergent fiber and cellulose. All diets provided a concentration of amoniacal nitrogen suitable for ruminal microbial growth; however, for animals fed whole corn grain treated with urea, this concentration was significantly lower. Bacterial activity was lower in animals fed diets containing ground corn and they do not differ among animals fed whole corn grain or corn grains treated with urea.Key Words: bacterial activity, bovine, in situ degradability Influência do processamento do milho fornecido na dieta na dinâmica ruminal de novilhos leiteirosRESUMO -Objetivou-se com este trabalho avaliar a dinâmica ruminal de novilhos leiteiros recebendo dietas contendo grão de milho inteiro, milho moído na forma de quirera ou milho inteiro tratado com ureia. Para isso, foram mantidos em regime de confinamento seis animais fistulados no rúmen alimentados com dietas com teores semelhantes de energia e proteína. A dieta foi formulada com relação volumoso:concentrado de 40:60 na matéria seca e continha silagem de sorgo como volumoso. O delineamento utilizado foi na forma de um quadrado latino 3 × 3, com três animais e três períodos, e foi repetido duas ou quatro vezes conforme o parâmetro estudado, totalizando seis ou 12 repetições por dieta. O tratamento do grão de milho não influenciou o pH do líquido ruminal nem a degradabilidade ruminal da matéria seca, fibra em detergente ácido e celulose. Todas as dietas propiciaram concentração de N-amoniacal adequada para o crescimento microbiano ruminal;
RESUMO -Objetivou-se avaliar o crescimento de novilhas de diferentes grupos genéticos no sistema de produção superprecoce. Utilizaram-se 132 novilhas dos seguintes grupos genéticos: 18 ¾ Canchim × ¼ Nelore (¾ CN); 18 ½ Canchim × ½ Nelore (½ CN); 24 Simbrasil -⅝ Simental × ⅜ Nelore; e 72 Three-cross ¼ Simental × ¼ Nelore × ½ Angus. As novilhas foram desmamadas aos 210 dias de idade, com 247,4 ± 16,5 kg de peso vivo (PV), mantidas em creep-feeding durante a fase de cria e confinadas por 132 ± 14 dias até atingirem 350 kg PV e 5 mm de gordura subcutânea, quando, então, foram abatidas. Os grupos genéticos não influenciaram o ganho de peso médio diário, porém a espessura de gordura subcutânea do dorso (EGS) e da garupa (EGG) foi maior nos animais Three-cross, que apresentaram os maiores valores iniciais (1,07 kg/dia). Não houve diferença na área de olho-de-lombo (AOL) inicial, porém a os animais Three-cross apresentaram os maiores valores iniciais. Nos animais do grupo Three-cross, a área de olho-de-lombo (AOL) final e ajustada para 100 kg de peso vivo (PV) foi inferior à observada nos demais grupos, porém o peso final foi superior ao do grupo Simbrasil, com tempo intermediário de confinamento. Ajustando-se os valores de AOL e EGG para o menor número de dias de confinamento (114 dias), animais Simbrasil apresentam maior valor de AOL final e os animais Three-cross e Simbrasil, maior EGG final.Palavras-chave: área de olho-de-lombo, espessura de gordura da garupa, espessura de gordura subcutânea, ultrassom Muscular and adipose tissue growth of young heifers from different genetic groups in the intensive biological model ABSTRACT -The objective of this study was to evaluate the growth of young heifers from different genetic groups in an intensive meat production system. One hundred and thirty two heifers from four different genetics groups were used:and 72 -Three way cross ¼ Simmental × ¼ Nellore × ½ Angus. The heifers were weaned at 210 days of age with 247.4 ± 16.5 kg live weight (LW), from creep-feeding during the rearing phase and 132 ± 14 days in feedlot system. The animals were slaughtered when they reached 350 kg LW and 5 mm backfat thickness (BFT). There was no difference among the genetic groups for average daily weight gain but the three way cross heifers presented the highest values (1.07 kg/day). There were no differences for initial ribeye area (REA), but the three cross animals obtained larger values of initial backfat thickness (BFT) and initial rump fat thickness (RFT). In the animals in the three -cross group, the final ribeye area and adjusted to 100 kg live weight (LW) was lower than that observed in the other groups, but the final body weight was superior to the Simbrasil group, with intermediate feedlot time.
