und 2. in erster Linie auf eine Hexanbindung in den Hiillenzellen zuriickzufuhren. Aus den aufgeschlossenen Kemfleischzellen ist das Fett vollstandig extrahiert. Sie sind &r die Resthexanbindung ohne Belang. In die noch intakten Zellen ist das Hexan zwar eingedrungen, aber insbesondere die stabilen Hiillenzellen haben den fiir Triglycerid permeablen Zustand noch nicht erreicht, so daR der hexanbindende Restfettgehalt des Schrotes ganz wesentlich in den intakten Hiillenzellen zu suchen ist. D a s niedrigere Resthexan bei Pos. 3. und 4., d. h. bei kiirzeren Extraktionszeiten istebenfalls unter Hinzuziehung der dargelegten Modellvorstellungdamit zu erklaren, daB der hohere Restfettgehalt im Schrot (vor allem bei Pos. 3. mit ca. 1000 ppm Resthexan) im aufgeschlossenen Kemfleisch vorliegt, aus dem aber das Hexan wiederum leichter freizusetzen ist, wed die Zellwande zerstort sind. Die Hiillenzellen mit ihren naturgemaB noch weitgehend vollstandig enthaltenem Fett tragen jedoch deshalb weit weniger zur Resthexanbindung bei, wed in sie wegen der stark behmderten Diffusion iiber die kompakten Zellwande das Hexan nur in geringer Menge eingedrungen ist. Die letztere Vermutung trifft auch fiir Pos. 4. zu, jedoch ist nach 2 Stunden Extraktionsdauer das Kedeisch bereits weiter entfettet als bei Pos. 3., so daB bei Desolventierung Resthexanwerte unter 1000 ppm erreicht werden. Bei technisch interessanten Extraktionszeiten in der GroBenordnung von 60 min verbleibt somit der groBte Teil des in den Hiillenzellen eingelagerten Oles intrazellular zuriick. AbschlieBend ist zusammenfassend festzustellen: dle beiden experimentellen Befunde ausgepriigt dickwandige Aleuronzellen in den Rapshiillen ein gegeniiber anderen Olsaaten hoher Fettgehalt in den lassen das Resthexanproblem im Rapsschrot durch die Wirkung zweier Effekte plausibel werden: 1. aus der Bindung des Hexans an das in den Hiillen verbleibende Restol, was als Gleichgewichtsproblem beschrieben werden kann; 2.auf die Behinderung der Diffusion des Hexans in den Wandungen der Hiillenzellen, was somit als zeitabhangiges Dihsionsproblem aufzufassen ist. In beiden Fallen sind aber die insbesondere bei der Verarbeitung von Rapssaat nicht aufschlieBbaren Hiillenzellen letztlich als Verursacher der Resthexanbindung anzusehen, was die Bedeutung der Rapsschalung mit dem Ziel der und Aleuronzellen der Rapshiillen Resthexansenkung unterstreicht. Positive Effekte der Resthexansenkung durch verfahrenstechsche MaDnahmen bei der Desolventierung konnen durchaus beobachtet werden. Rastermikroskopische Aufnahme der Hiillen von unterscluedhchen Rapssorten, iiber die in einer weiteren Arbeit zu berichten sein wird, lassenvermuten, daB die Wirksamkeit dieser verfahrenstechnischen MaBnahmen jedoch sehr stark sortenspezifisch beeinfluBt sein wird. Beispielsweise konnen sich bei Sommerraps und Winterraps dle Anteile der Aleuronzellen (bezogen auf die Gesamtmasse der Saathiillen) deutlichunterscheiden.
