Die rnit der Erkennung der ernahrungsphysiologischen Bedeutung des Vitamin C immer notwendiger werdende Bestimmung des Gehaltes der verschiedensten Lebensmittel an diesem Wirkstoff ist AnlaB zur standigen Uberprufung und Verbesserung der Ascorbinsaure-Analytik. Insbesondere bei der Erorterung der Spezifitat der Verfahren werden wiederholt Fragen nach der Art und Reaktion ahnlicher, in Lebensmitteln vorhandener Begleitsubstanzen angeschnitten. Derartige Stoffe konnen bereits primar im Substrat vorhanden oder durch sekundare Umsetzungen der verschiedenen anwesenden Substanzen entstanden sein ; daneben muB auch rnit Oxvdationsprodukten der L-Ascorbinsaure (AS) gerechnet werden.
Die im Molekiil der L-Ascorbinsaure (AS) vorliegende Endiolgruppierung ist Ursache der starken Reduktionswirkung dieser Verbindung, auf die sich die Mehrzahl der analytischen Reaktionen griindet. Infolge der Nachbarstellung einer weiteren C=O-Doppelbindung gelingt der Nachweis, etwa mit Dichlorphenol-Indophenol oder Silbernitrat, bereits im sauren Medium; die AS zahlt damit zu den sogenannten , ,aci-Reduktonen' '.Durch polarographische Studien wurde festgestellt, daB die Endiolgruppe ebenfalls elektroaktiv ist und die AS wie auch andere Endiole eine gut ausgepragte anodische 2-Elektronen-Stufe uber einen groBen, sowohl sauren als auch alkalischen pH-Bereich gibt.
