Durante el proceso de globalización los territorios rurales sufren distintas desestructuraciones en función del grado de avance de los procesos de mercantilización de estos espacios. A nivel mundial, la producción lechera constituye un elemento estratégico para la consolidación del capital agroindustrial. Actualmente, Latinoamérica es el primer continente productor de leche en polvo y el tercero a nivel de producción lechera (FAO, 2011). En esta región, si bien la leche es producida, en su mayoría, por pequeños y medianos agricultores, el procesamiento, industrialización y comercialización dependen de lógicas dominadas por grandes agroindustriales. El artículo presentado pretende comparar la realidad de dos países como Argentina (segundo productor en la región) y Ecuador (quinto productor en la región) para comprender cuales son las transformaciones generadas en los territorios rurales y como en función de las múltiples respuestas provenientes de las economías campesinas, las estrategias de expansión del capital agroindustrial también se ven modificadas.
