RESUMO -O experimento foi realizado objetivando avaliar a composição tecidual e química do músculo Longissimus dorsi de cordeiros Suffolk alimentados em comedouros privativos com ração contendo 0; 6,60; 13,20 ou 19,80% de semente de girassol. Ao nascer, os cordeiros foram numerados, pesados e distribuídos aleatoriamente nos piquetes compondo quatro repetições por tratamento em um total de 16 cordeiros. As rações continham 2,65; 2,78; 2,89 ou 2,93 Mcal/kg de energia metabolizável e 18,38; 18,75; 19,98 ou 21,18% de proteína bruta e foram fornecidas à vontade aos cordeiros. Os cordeiros foram pesados a cada 14 dias e mantidos com as ovelhas até atingirem o peso vivo de abate pré-estabelecido (28 kg). As carcaças foram mantidas durante 24 horas na câmara frigorífica a 5ºC e, posteriormente, foram seccionadas em sete regiões anatômicas para coleta dos lombos esquerdo e direito e obtenção, no músculo Longissimus dorsi, do peso dos componentes do lombo (músculo, osso e gordura) e da composição química e do perfil de ácidos graxos do músculo, do osso e da gordura. A semente de girassol influenciou o peso total do lombo, os pesos de músculo e tecido conjuntivo e o rendimento do tecido conjuntivo.O aumento no percentual de semente de girassol na ração diminuiu a quantidade dos ácidos láurico e palmítico (saturados) e aumentou a dos ácidos oléico e linoléico (insaturados). A qualidade nutricional da carne dos cordeiros melhora com aumento da utilização de semente de girassol na dieta.

-Twenty-seven carcasses of non-castrated confined goat kids, (18 ¾ Boer + ¼ Saanen and nine Saanen) with slaughtered weight of 30.1 ± 0.27 kg were used to evaluate quantitative characteristics of the carcass and qualitative characteristics of the loin and shoulder. The animals were distributed in a completely randomized design in a 2 × 3 factorial arrangement (breed group × diet). The diets consisted of inclusion of dry yeast, as follows: soybean meal, soybean meal + dried yeast or dried yeast. The other ingredients of the diets were oat hay (30% DM), ground corn and mineral mixture. Hot carcass weight, cold carcass weight, weight loss by cooling, true carcass yield and carcass compactness index were not influenced by the inclusion of dry yeast nor by racial group. Saanen goats presented the highest carcass commercial yield of carcass, but they needed 15 days more to reach the slaughter weight. The cut yields were not affected, but a significant interaction for shoulder yield occurred. Dry yeast and breed group did not influence the measurements of the loin, the muscle:bone ratio, the cooking losses, the shear force and composition. There was a significant interaction between the inclusion of dry yeast in the diets and the breed group for the muscle proportion on loin, which was higher in the ¾ Boer + ¼ Saanen group. For the shoulder, inclusion of dry yeast and breed group did not alter the proportions of muscle, fat, protein and ash. However, in Saanen goats, the proportion of bone and moisture content were higher and total lipid content was lower. The ¾ Boer + ¼ Saanen groups showed higher precocity. Dry yeast is an alternative protein source that can be included in diets for goat kids.Key Words: byproduct of sugar cane, genetic group, goat, meat quality, Saccharomyces cerevisiae Características quantitativas de carcaça e de qualidade da carne de cabritos ¾ Boer + ¼ Saanen e Saanen alimentados com rações contendo levedura seca RESUMO -Foram utilizadas 27 carcaças de cabritos machos não-castrados, confinados, sendo 18 ¾ Boer + ¼ Saanen e nove Saanen com peso de abate de 30,1 ± 0,27 kg, para avaliar as características quantitativas da carcaça e qualitativas do lombo e da paleta. Os animais foram distribuídos em delineamento inteiramente casualizado em arranjo fatorial 2 × 3 (grupo racial × rações). As rações foram constituídas pela inclusão de levedura seca, sendo: farelo de soja, farelo de soja + levedura seca ou levedura seca. Os demais ingredientes das rações foram o feno de aveia (30% da MS), milho moído e mistura mineral.Os pesos de carcaça quente e de carcaça fria, as perdas de peso por resfriamento, o rendimento verdadeiro de carcaça e o índice de compacidade de carcaça não foram influenciados pela inclusão da levedura seca nem pelo grupo racial. O grupo Saanen apresentou maior rendimento comercial de carcaça, porém 15 dias a mais de idade para atingir o peso de abate. The objective of this study was to evaluate the effect of protected fat from palm oil on body weight and milk production and composition of lactating Lacaune ewes. Four treatments (0, 20, 40, and 60 g kg −1 as fed) of protected fat from palm oil were used to feed nine animals in each group. Isoproteic and isoenergetic diets were formulated and adjusted for each animal after milk weighing. Corn silage was used as roughage on the same proportion of concentrated to feed all animals. Milk samples were collected weekly for chemical analyses up to the seventh week of the lactation period and every other week after that until the end of the lactation period (182 days). Increased levels of protected fat in the diet of lactating ewes resulted in lower body weight gain and poor animal body condition. The production peak showed differences and was higher in the treatment of 40 g kg −1 of palm oil, but milk production during lactation was higher in animals that received 60 g kg −1 of protected fat supplementation. Animals fed 60 g kg −1 of protected fat showed the highest milk yield. We observed a positive linear effect on milk fat content, whereas the effect on milk protein, lactose, and nonfat solids was linearly negative after dairy sheep fed protected fat from palm oil. There were no changes in the amount (kg) of milk fat, protein, lactose, total solids, and nonfat solids in any of the treatments. Therefore, protected fat from palm oil is efficient to increase milk production and fat content.

RESUMO -Avaliaram-se o desempenho e as características quali e quantitativas da carcaça de cordeiros alimentados com ração contendo semente de girassol. Utilizaram-se 16 cordeiros distribuídos aleatoriamente em um delineamento inteiramente casualizado com quatro tratamentos (0,00; 6,60; 13,20 weighed every 14 days and kept with the ewes until they reached 28 kg, when were slaughtered, after solid fasting for 18 hours, to obtain slaughter body weight and recording hot carcass weight and gastrointestinal content, used in the calculation of empty body weight. However, the hot carcass weight and cold carcass weight, the weights of neck, low, shoulder, rib, thru rib, loin and carcass commercial yields and rib, thru rib, loin, shoulder, neck and low showed effect of sunflower seed addition. The addition of sunflower seed in the diet does not influence the qualitative and morphometric characteristics of carcass of lambs.Key Words: fatty acids, cuts, sheep IntroduçãoNa última década, as importações nos mercados nacional e internacional de ovinos vivos, carcaças congeladas e carcaças de cordeiros aumentaram 100 e 300% (Couto, 2001). Entretanto, a cadeia agroindustrial nacional não tem eficiência na oferta do produto, pois os animais abatidos geralmente apresentam peso desuniforme ao abate e idade avançada, além de carne de baixa qualidade e de menor aceitação pelo consumidor.
