La metodología de Aprendizaje-Servicio posibilita al estudiantado la aplicación de conocimientos teóricos en un contexto real, a través de la satisfacción de una necesidad señalada por la comunidad, donde el cuerpo docente guía el aprendizaje del alumnado. No obstante, dada las restricciones de cuarentena producto de la pandemia por COVID-19, las actividades de Aprendizaje-Servicio de una Escuela de Nutrición y Dietética de Santiago, Chile se implementaron en modalidad a distancia. El objetivo principal de este estudio fue determinar la percepción de la experiencia de Aprendizaje-Servicio en modalidad a distancia desde la mirada del alumnado y las personas beneficiaras de las actividades de A+S de una Universidad chilena durante el año académico 2020. Se trata de una investigación cuantitativa con un diseño descriptivo, transversal por conveniencia no probabilístico. La muestra estuvo constituida por 56 estudiantes y 28 personas beneficiaras de Santiago de Chile. Para describir la percepción de la experiencia se aplicó un cuestionario elaborada y validada para este estudio. Nuestros resultados señalan que más del 50% del alumnado y las personas beneficiaras valoraron de manera positiva las actividades en modalidad a distancia. Las personas beneficiaras calificaron la experiencia con un promedio de notas mayor que el estudiantado (Mbeneficiarias= 4.64 contra Mestudiantes= 4.50; p = .321). En conclusión, la metodología de Aprendizaje-Servicio en modalidad a distancia fue bien valorada por las personas que participaron, de manera que es una opción de implementación.
Las Enfermedades Transmitidas por Alimentos (ETA) son causadas por el consumo de alimentos o agua contaminada, debido a las malas prácticas en el manejo causando daño a la salud de las personas. El objetivo de este estudio fue determinar el porcentaje de cumplimiento de las Buenas Prácticas de Manufacturas (BPM) basado en el Reglamento Sanitario de los Alimentos de Chile, de diferentes fundaciones sociales pertenecientes de la Región Metropolitana de Chile. El diseño de estudio fue descriptivo, en una muestra intencionada y no probabilística de 12 fundaciones sociales de la Región Metropolitana de Chile. Se aplicó in situ la lista de chequeo de las BPM versión 04, código 834 - PR02- INS2. De acuerdo al porcentaje de cumplimiento de 4 factores críticos de las BPM de las 12 fundaciones sociales de la Región Metropolitana, se observó que sólo 3 de las fundaciones cumplen con el 100% de los 4 factores críticos. En relación al porcentaje de cumplimiento general de las BPM, se examinó que el 50% de ellas cumplió con el 70% o más de acuerdo al requerimiento del Ministerio de Salud de Chile. Existe un bajo cumplimiento de las Buenas Prácticas Manufacturas en las 12 fundaciones evaluadas de la Región Metropolitana de Chile, principalmente en la higiene personal y en capacitación además de solo cumplir con el factor crítico Nº1. Por lo tanto, se debe capacitar a las fundaciones y establecer procedimientos escritos para así disminuir y evitar enfermedades transmitidas por los alimentos y garantizar la inocuidad alimentaria.
