AlimentAtion et identité(s) : de l'Antiquité à l'étude du fAit AlimentAire contemporAin, un rApprochement heuristique Le lancement, en juin 2017, des États généraux de l'alimentation par le gouvernement français souligne avec acuité à quel point la question de l'alimentation est au centre de nombreux enjeux actuels : politique, écologique, nutritionnel et de santé, religieux, etc. Si l'alimentation peut aujourd'hui être vue comme un défi, elle est aussi un thème à la mode, aussi bien dans le grand public, comme en témoignent, par exemple, les nombreux émissions télévisées ou magazines qui lui sont consacrés, que chez les scientifiques de diverses disciplines, en particulier chez les historiens, qui se sont saisis plus largement de la thématique du fait alimentaire en soulignant son importance dans l'étude d'une société, qu'elle soit ancienne ou actuelle. En effet, l'alimentation n'est pas seulement un acte de simple nutrition : elle joue un rôle essentiel en ce qui concerne la construction de l'identité, tant individuelle que collective, comme Brillat-Savarin le rappelait déjà, au début du XIX e siècle, avec sa formule devenue célèbre : « Dis-moi ce que tu manges, je te dirai ce que tu es » 1. D'ailleurs la thématique de l'identité a également connu une grande vogue ces dernières décennies, aussi bien dans le domaine public que dans les études scientifiques. Bien qu'elle soit de plus en plus contestée, l'identité peut apparaître comme une notion transversale d'une approche interdisciplinaire de l'alimentation, en particulier entre l'histoire, la sociologie et l'anthropologie. Ces deux dernières disciplines se sont en effet particulièrement intéressées, ces dernières années, au fait alimentaire, et elles peuvent apporter aux historiens, même à ceux de l'Antiquité, des outils conceptuels innovants. Cet article introductif au dossier thématique de la présente livraison de Kentron se propose donc de brosser un bref tableau historiographique de ces deux questions, tant dans le champ des études historiques-en insistant particulièrement sur l'étude du fait alimentaire de l'Antiquité et du haut Moyen Âge-que dans ceux de la sociologie 1. Cet aphorisme, tiré de son ouvrage Physiologie du goût, paru en 1825, est certainement la formule la plus galvaudée de Brillat-Savarin, souvent considéré comme le fondateur de la gastronomie en tant que science moderne (cf. Beaugé 2012). Du côté des études historiques, l'intérêt pour l'alimentation apparaît essentiellement avec le développement, dans les années 1930, de la première génération de l'École des Annales 2. Rompant avec une histoire traditionnelle positiviste, qui étudiait essentiellement les guerres et les royautés, Lucien Febvre et Marc Bloch, ses deux fondateurs, s'intéressent à la société, aux croyances, aux moeurs et à l'économie-thématiques qui ne pouvaient que croiser celle de l'alimentaire. C'est ainsi qu'en 1936, Lucien Febvre lance, par le biais du Musée national des arts et traditions populaires, une grande enquête sur l'alimentation populaire en France, dont certai...
Ce dossier s'inscrit dans un vaste programme de recherche européen sur le jeu 1 dans l'Antiquité (ERC Advanced Locus Ludi. The Cultural Fabric of Play and Games in Classical Antiquity 2 ), piloté depuis 2017 par Véronique Dasen, professeure d'archéologie classique à l'Université de Fribourg, en Suisse. Considérant la culture ludique antique en tant qu'opérateur et révélateur des valeurs et des normes d'une société, ce projet vise à saisir les différentes facettes d'un « jouer » à la fois métaphore et modalité d'action, comme le définit Roberte Hamayon 3 . Depuis le lancement de ce projet le 1 er octobre 2017 et l'organisation sous l'égide de Typhaine Haziza, maîtresse de conférences en histoire ancienne à l'Université de Caen Normandie, les 13 et 14 octobre, d'une manifestation scientifique commune autour du jeu et des jouets, à l'occasion de la venue au Musée archéologique de Vieux-la-Romaine de l'exposition (Veni, Vidi, Ludique), montée par Véronique Dasen, la collaboration entre les deux chercheuses n'a jamais cessé. Elle a produit le premier acte du projet Locus Ludi : la publication d'un dossier thématique dans la livraison de Kentron, 34, 2018, intitulé « Jeux et jouets » 4 , qui a permis de poser les questions ouvertes par ce champ de recherche et de dessiner des pistes variées à explorer.Quatre ans plus tard, le programme européen a déjà réalisé de nombreuses recherches et collaborations scientifiques fructueuses qui ont abouti à diverses publications parues 5 ou à paraître 6 .
