Introdução: O comportamento alimentar é a conceituação das ações que o indivíduo tem antes e durante a refeição, bem como onde, o que, com quem e quando se come e se relaciona. Sabe-se que fatores estressantes tendem a influenciar na alimentação, principalmente em estudantes durante os primeiros anos de estudo em instituições de ensino superior. Objetivo: Avaliar o comportamento e o consumo alimentar de estudantes ingressantes no curso de Nutrição. Método: Tratou-se de um estudo quantitativo, analítico e transversal realizado no Centro Universitário Estácio do Ceará, com 65 discentes que estavam matriculados no primeiro semestre do Curso de Nutrição em 2019. Resultados: A maioria 69,2% (n=45) dos participantes era do sexo feminino, 72,3% (n=47) não consumiam frequentemente verduras cruas e/ou cozidas. Em relação ao comportamento alimentar de restrição verificou-se uma associação significativa (p=0,03) quanto o consumo de embutidos, uma vez que os estudantes que apresentavam um consumo adequado possuíam um maior comportamento de restrição (27,62±9,9) em relação aos que consumiam de forma inadequada (20,59±7,9). Conclusão: Há necessidade de realizar educação nutricional com os estudantes de nutrição referente à ingestão e o comportamento alimentar.
