The graphical dependence of the washing capacity of ethanol-containing soapstock on the concentration in an aqueous solution and the temperature of interaction with the polluted material has been determined. It is proposed to use a 40 % aqueous solution of ethanol-containing soapstock in the hand cleaning paste technology. This soapstock solution has a washing capacity of 92–98 % at the temperature of interaction with the polluted material of 25–40 °C. The regularity of the effect of the structurant content on the consistency of hand cleaning paste was investigated using an approximating polynomial. This made it possible to substantiate the effective concentration of carboxymethyl cellulose (0.4...0.6 %) and cetysltearyl alcohol (1.8...2.0 %) in the formulation. The obtained regression equation is useful for adjusting the content of structurants in the formulation, depending on the consumer's requirements for the viscosity of the developed detergent. A comparison of the quality indicators of the developed hand cleaning paste based on ethanol-containing soapstock with a sample of similar “Primaterra Automotive” commercial hand cleaning paste was carried out. The quality indicators of the developed paste are as follows: effective viscosity at 20...22 °С – 32.0 Pa∙s; foaming capacity – 23 mm, foam stability – 62.0 %; washing ability – 92.0 %. It was determined that these quality indicators do not differ significantly in the developed detergent and commercial analogue. The data obtained indicate the prospects of processing ethanol-containing soapstock into the hand cleaning paste based on natural surfactants. The developed detergent due to the content of ethanol, glycerin and hydrogen peroxide has antiseptic properties, which is a competitive advantage among analogues. When introducing plant and animal protein products, in addition to nutritional value, it is advisable to assess their physicochemical properties and technological indicators, in particular, homogeneity and consistency stability. The aim of research is to determine the effect of consistency stabilizers on the viscosity of a reconstituted hypertonic drink for athletes based on flaxseed cake, sesame seeds and whey protein concentrate. The mass fraction of protein in the model dry mixture of a hypertonic drink, as well as in its individual components by the Kjeldahl method, the mass fraction of fiber – by the gravimetric method, the mass fraction of lipids – by the extraction-gravimetric method, the mass fraction of moisture – by the thermogravimetric method. The mass fraction of ash in the mixtures was carried out by the method of incineration followed by calcining the mineral residue at a temperature of 450 ... 600 °C. The effective viscosity in the reduced samples of mixtures without and with the addition of stabilizers was determined on a rotational viscometer "Rheotest 2". For the planning of the experiment and data processing, mathematical methods were applied using the Microsoft Office Excel 2003 software package. The chemical composition of individual components and a model dry mixture of a hypertonic drink for the nutrition of athletes, including the content of compounds that have a stabilizing effect on the restored product, has been investigated. It has been proved that the effective viscosity of the reconstructed model mixture in comparison with the effective viscosity of the individual components of the mixture nonaditively increases. The mutual influence of the consistency stabilizers (gum arabic (E 414) and carboxymethylcellulose (E 466)) on the value of the effective viscosity of the reconstituted hypertonic drink was investigated. The developed model mixture of a hypertonic drink is recommended to be used for the development of competitive dry mixtures of hypertonic drinks of plant and animal origin for the nutrition of athletes
Об'єктом дослідження є ефективність вилучення хлорогенової кислоти-природного антиоксиданту, в залежності від умов її екстрагування зі соняшникового шроту. Основною проблемою данного питання є той факт, що на ступінь екстрагування вказаної фенольної сполуки впливає багато факторів, таких як ступінь подрібнення продукту, вид сировини, спосіб екстрагування, природа розчинника-екстрагента, температура та тривалість процесу екстрагування, гідромодуль в системі «сировина-екстрагент» тощо. Вплив кожного з цих параметрів потребує детального розгляду та відповідних досліджень. Це дасть змогу визначити оптимальні значення вказаних параметрів процесу екстрагування та підвищити ефективність вилучення хлорогенової кислоти. В даній роботі сировиною для отримання хлорогенової кислоти обрано шрот з насіння соняшникудешеву вторину сировину олієжирових виробництв. У попередніх дослідженнях визначено, що високоефективним екстрагентом вказаного антиоксиданту виступає розчин етилового спирту з концентрацією 60 %, а оптимальною температурою процесу екстрагування хлорогенової кислоти зі соняшникового шроту є температура кипіння екстрагенту. В результаті даного дослідження вивчено закономірність впливу на ступінь вилучення хлорогенової кислоти таких технологічних параметрів, як гідромодуль в системі «шрот-розчин етилового спирту 60 %» (далі за текстом-«шрот-екстрагент») та тривалість процесу екстрагування. Експерименти по визначенню залежності ступеня вилучення хлорогенової кислоти від гідромодулю в системі «шрот-екстрагент» та тривалості екстрагування проведено відповідно до плану повного факторного експерименту. Для планування експерименту та обробки даних застосовані математичні методи з використанням програмних пакетів Місrosoft Оffice Ехсеl 2003 (USA) та Stat Soft Statistica v6.0 (USA).
