Fluctuating asymmetry as the value of random deviations reflects either stability or instability of development. It is quite often used by researchers to assess the level of influence of anthropogenic and climatic factors. This study is focused on the territory with favorable climate and low anthropogenic load. The object of the study includes leaf blades of woody plants Citrus X sinensis (Valencia), Citrus limon (Molla Mehmet), Citrus reticulata (Okitsu wase C. unshiu) and Punica granatum (Emek) of the city of Kemer of the Republic of Turkey. The reliability of the presented results is justified by the use of correct methods of study and adequate statistical processing of big data. The integrated indicator of fluctuating asymmetry was the highest for leaf blades of Punica granatum (0.019), Citrus limon (0.017), these plants are introduced species. Citrus X sinensis and Citrus reticulata were characterized by low level of destabilization of plants in the conditions of the Mediterranean Area. It is shown that the most sensitive morphological features of fluctuating asymmetry for Citrinae Citrus X sinensis subtribe plants are j4 and j5, Cítrus límon – j2 and j5, Citrus reticulata – j3 and j4.
The aim of the study was to determine and compare the antiradical and antibacterial activity of the Boletus edulis basidiomycetes growing in different climatic zones: the temperate continental Mediterranean (Montenegro) and sharply continental eastern Siberia (Russia). The objects of study were ceps (Boletus edulis) collected in Montenegro (Durmitor National Park, harvested in August 2019) and in Russia (Siberia, Abansky district, harvested in August 2019). Mushrooms dried and crushed to a powder state were used to obtain aqueous extracts (water module 1:100). The antiradical activity of aqueous cept extracts was studied by UV and visible spectroscopy using a stable model radical of 2,2-diphenyl-1-picrylhydrazyl. For antiradical activity studies, samples were taken after 30, 60, 90 min of extraction. Antibacterial activity was evaluated by the difference in the diameter of the colonies of the test bacteria Escherichia coli, Pseudomonas aeruginosa, Klebsiella pneumoniae, Staphylococcus aureus 209p and Acinetobacter baumannii. It was shown that under the same conditions for sample preparation and analysis, Siberian ceps have a high antiradical activity value (the maximum value is 75% for mushrooms from Siberia against the maximum value of 33% for mushrooms from Montenegro, respectively). The results of the evaluation of antibacterial activity showed that regardless of the climatic zone of the growth of mushrooms, their aqueous extracts obtained after 30 minutes of extraction exhibit bacteriostatic effect in relation to all strains of bacteria. Longer extraction (more than 60 min) leads to the stimulating effect of Boletus edulis extracts on the growth of the same bacteria.

The food industry of the Krasnoyarsk region is highly associated with local agricultural raw materials processing, both of plant and animal origin; however, wild resources are practically not used. Moreover, food enterprises are concentrated mainly in the southern regions, while the northern regions of the region, characterized by a fairly low level of anthropogenic impact, are a promising territory for organizing the processing of plant resources, the collection of which is implemented in this area. Thus, studies aimed at substantiating the possibility of using raw plant materials from the regions of the Arctic zone of the Krasnoyarsk region in the production of food products are relevant. The article discusses the possibility of using fruits of Sorbus Sibirica Held. for the purpose of enriching food products with vitamins, minerals and dietary fibers. Current directions for the subsequent development of food products with the inclusion of wild fruits in their composition are demonstrated. A possible scheme for processing wild-growing raw materials in the area where its harvesting is implemented is given.
