Bifidobacteria are members of the intestinal microbiota of mammals and other animals, and some strains are able to exert health-promoting effects. The genus belongs to the phylum. ,, and constitute the most abundant phyla in the human intestinal microbiota, and being predominant in adults, and in breast-fed infants, where bifidobacteria can reach levels higher than 90% of the total bacterial population. They are among the first microbial colonizers of the intestines of newborns, and play key roles in the development of their physiology, including maturation of the immune system and use of dietary components. Indeed, some nutrients, such as human milk oligosaccharides, are important drivers of bifidobacterial development. Some strains are considered probiotic microorganisms because of their beneficial effects, and they have been included as bioactive ingredients in functional foods, mainly dairy products, as well as in food supplements and pharma products, alone, or together with, other microbes or microbial substrates. Well-documented scientific evidence of their activities is currently available for bifidobacteria-containing preparations in some intestinal and extraintestinal pathologies. In this review, we focus on the role of bifidobacteria as members of the human intestinal microbiota and their use as probiotics in the prevention and treatment of disease.
Probiotics are live microorganisms that, when administered in adequate amounts, confer a health benefit on the host. The probiotic microorganisms most commonly used in the food and pharmacy industry belong to Lactobacillus and Bifidobacterium, and several strains of these genera have demonstrated beneficial attributes. In addition, some other intestinal bacteria inhabiting the human microbiota, such as Faecalibacterium prausnitzii and Akkermansia muciniphila, have recently been discovered and are able to display health-promoting effects in animal and human trials. The beneficial properties of probiotics have been known for a long time, although little is known about the molecular mechanisms and the molecules responsible for their effects. However, in recent years, advances in microbiome studies, and the use of novel analytical and molecular techniques have allowed a deeper insight into their effects at the molecular level. This review summarizes the current knowledge of some of the molecules of probiotics and other intestinal commensal bacteria responsible for their immunomodulatory effect, focusing on those with more solid scientific evidence.
There is a general interest in finding new ways of valorizing fruit and vegetable processing by-products. With this aim, applications of industrial fermentation to improve nutritional value, or to produce biologically active compounds, have been developed. In this sense, the fermentation of a wide variety of by-products including rice, barley, soya, citrus, and milling by-products has been reported. This minireview gives an overview of recent fermentation-based valorization strategies developed in the last 2 years. To aid the designing of new bioprocesses of industrial interest, this minireview also provides a detailed comparison of the fermentation conditions needed to produce specific bioactive compounds through a simple artificial neural network model. Different applications reported have been focused on increasing the nutritional value of vegetable by-products, while several lactic acid bacteria and Penicillium species have been used to produce high purity lactic acid. Bacteria and fungi like Bacillus subtilis, Rhizopus oligosporus, or Fusarium flocciferum may be used to efficiently produce protein extracts with high biological value and a wide variety of functional carbohydrates and glycosidases have been produced employing Aspergillus, Yarrowia, and Trichoderma species. Fermentative patterns summarized may guide the production of functional ingredients for novel food formulation and the development of low-cost bioprocesses leading to a transition toward a bioeconomy model.
ResumoObjetivo: Analisar o processo de alimentação de idosos institucionalizados e, mais especificamente, descrever o perfil sociodemográfico dos idosos, verificar as possíveis alterações estruturais do sistema estomatognático, das funções de mastigação e deglutição e constatar as dificuldades alimentares autorreferidas. Método: Estudo do tipo quantitativo, descritivo, observacional, transversal e prospectivo. A amostra foi constituída por 27 indivíduos do gênero feminino e três do gênero masculino, com idades entre 65 e 93 anos, residentes em uma instituição de longa permanência para idosos de Canoas-RS, no período de julho a agosto de 2012. Utilizando-se de dois protocolos, foi realizada uma entrevista, uma avaliação das estruturas do sistema estomatognático e a observação de uma refeição em ambiente habitual de alimentação do idoso. Resultados: Quanto aos aspectos alimentares, a dificuldade de mastigar algum tipo de alimento e a preferência por alimentos macios foram frequentemente citadas. As principais modificações nas estruturas estomatognáticas e em suas funções foram as alterações de mobilidade e tonicidade e a adaptação da mastigação e da deglutição, por meio da participação exagerada da musculatura perioral e do ritmo mastigatório lentificado. Conclusão: O processo de alimentação dos idosos institucionalizados sofre modificações ao longo dos anos, e a habituação das dificuldades encontradas, por meio da realização de compensações, é frequente entre eles. Os resultados evidenciam a necessidade da atuação fonoaudiológica interdisciplinar nas instituições de longa permanência para idosos, a fim de minimizar o impacto dos efeitos do envelhecimento nas funções estomatognáticas, proporcionando qualidade de vida ao idoso institucionalizado. Cow’s milk protein allergy (CMPA) is the most common food allergy in infancy. Non-IgE mediated (NIM) forms are little studied and the responsible mechanisms of tolerance acquisition remain obscure. Our aim was to study the intestinal microbiota and related parameters in the fecal samples of infants with NIM-CMPA, to establish potential links between type of formula substitutes, microbiota, and desensitization. Seventeen infants between one and two years old, diagnosed with NIM-CMPA, were recruited. They were all on an exclusion diet for six months, consuming different therapeutic protein hydrolysates. After this period, stool samples were obtained and tolerance development was evaluated by oral challenges. A control group of 10 age-matched healthy infants on an unrestricted diet were included in the study. Microbiota composition, short-chain fatty acids, calprotectin, and transforming growth factor (TGF)-β1 levels were determined in fecal samples from both groups. Infants with NIM-CMPA that consumed vegetable protein-based formulas presented microbiota colonization patterns different from those fed with an extensively hydrolyzed formula. Differences in microbiota composition and fecal parameters between NIM-CMPA and healthy infants were observed. Non-allergic infants showed a significantly higher proportion of Bacteroides compared to infants with NIM-CMPA. The type of protein hydrolysate was found to determine gut microbiota colonization and influence food allergy resolution in NIM-CMPA cases.
TEMA: amamentação de pré-termo. OBJETIVO: descrever a amamentação em bebês pré-termo de muito baixo peso e associações com disfunções orais e apego mãe-bebê. MÉTODO: estudo transversal com 48 bebês. Foram realizadas entrevista com as mães, avaliação oral e dos sinais de apego. Foi feita análise descritiva e Teste Exato de Fischer. RESULTADOS: as variáveis que se associaram estatisticamente à adequação da sucção nutritiva foram: postura no seio, preensão do mamilo, coordenação da sucção, respiração e deglutição, força e sua sustentação, ritmo e alerta. Doze díades tiveram suspeita de alteração do apego. CONCLUSÃO: componentes do sistema oral estão associados à qualidade da alimentação destes prematuros. Isto sugere que a avaliação precoce da amamentação pode detectar dificuldades que a colocam em risco.
OBJETIVO: avaliar a alimentação de crianças fissuradas e descrever suas características; verificar o tipo de alimentação e suas dificuldades alimentares. MÉTODOS: foi um estudo quantitativo, transversal, observacional e descritivo. Participaram 23 pacientes fissurados de zero a nove anos, que realizaram avaliação do sistema estomatognático e cujos responsáveis foram entrevistados. Realizou-se análise estatística descritiva dos dados obtidos na avaliação, assim como análise teórica. RESULTADOS: o tipo de fissura mais encontrada foi a Fissura Transforame Unilateral. Das 23 crianças, duas (8,75%) foram amamentadas exclusivamente. As maiores dificuldades alimentares foram: seis (26,1%) dificuldade para sugar, 10 (43,5%) engasgos, quatro (17,4%) dificuldade para deglutir, três (13,0%) dificuldade para mastigar e 12 (52,2%) tinham refluxo nasal. As alterações das funções do Sistema Estomatognático mais frequentes foram a interposição lingual importante na deglutição e mastigação do tipo mascagem. CONCLUSÃO: a fissura transforame, mesmo sendo mais complexa, não excluiu o aleitamento materno exclusivo; o tipo de alimentação relacionado com a idade dos pacientes apresenta-se de maneira adequada; boa parte dos pacientes ainda usa a mamadeira com bico comum, constituindo um hábito deletério. As maiores dificuldades na alimentação relatadas pelas mães foram engasgos, refluxo nasal e dificuldade de sugar. As crianças que não apresentaram queixas de dificuldade de alimentação eram portadoras, na sua maioria, de fissura pré-forame incisivo.
