Penelitian ini bertujuan untuk mengetahui bagaimana pengaruh penambahan ekstrak bunga telang dan penambahan susu skim pada pertumbuhan bakteri asam laktat. Rancangan perconaan yang digunakan adalah Rancangan Acak Lengkap dengan perlakuan tanpa dan penambahan ekstrak bunga telang (1% v/v). Pembuatan yogurt dan yogurt telang menggunakan susu skim (SS), susu pasteurisasi (SP), susu UHT(SU), susu pasteurisasi dengan penambahan 5% (b/v) bubuk skim (SPS), dan susu UHT dengan penambahan 5% (b/v) bubuk skim (SUS). Hasil analisa total BAL menunjukkan tidak berbeda nyata dan semua variabel tersebut sesuai dengan Standar SNI 2981:2009. Kesimpulannya, Penambahan ekstak bunga telang tidak menghambat pertumbuhan bakteri asam laktat namun juga tidak meningkatkan pertumbuhan BAL. Namun, asam laktat meningkat dengan penambahan ekstrak bunga telang. Dengan menambahkan susu skim dapat pula meningkatkan asam laktat pada yogurt.
Blue pea flower (Clitoria ternatea L.) is known as the source of anthocyanin and has potential as a natural blue dye. The present study aimed to determine the effect of additional blue pea flower (BPFE) to yogurt from various types of milk. The study used dried blue pea flowers, extracted with water in 3:1 (g.L-1) ratio, at the extraction condition of 60 ˚C and 45 minutes. The fermentation was processed by adding BPFE to (A) liquid skim milk, (B) ultra-high temperature (UHT) milk, (C) pasteurized milk, (D) UHT milk with skim powder, and (E) pasteurized milk with skim powder. Then, the yogurt starter was added to all milk samples, evenly mixed and incubated for 24 hours at 37 ˚C. The fermentation of all five different milk to make plain yogurt also processed with same method without addition of BPFE. The antioxidant activity and color intensity of yogurt are evaluated to investigate the effect of BPFE in yogurt. The result showed that the plain yogurt without the addition of BPFE has antioxidant activity and increases with the addition of BPFE. Skim milk BPFE yogurt has the highest antioxidant activity (437.04 ppm) with the values of L*, a*, b* was 37.35; 2.02; -1.32, respectively. Antioxidant activity of the other BPFE yogurt, which was added with skim milk, also increased. The BPFE yogurt made from skim milk or added skim milk had higher antioxidant activity than the other types of milk.
Malnutrition has been a global public health problem, jeopardizing children growth and constituting a major cause of death in children in developing countries, including Indonesia. Malnourished person tends to have abnormal gut microbiota. Probiotics supplementation can be considered as one of preventative measures against imbalanced gut microbiota and pathogenic bacteria to enable optimum nutrition absorption. This study aimed to investigate the effects of dietary intake and supplementation of powder of indigenous probiotic Lactobacillus plantarum Dad-13 to undernourished children in East Lombok, Indonesia on their body mass index (BMI), faecal short-chain fatty acids and gut microbiota. This study was performed in a Randomized Double-Blind Placebo-Controlled design, involving 40 children aged 10-12 years old, with BMI/age ratio ≤ -2 standard deviation (SD). Subjects were randomly divided into two groups namely placebo and probiotic group. The placebo group consumed 1 gram of skimmed milk daily while the probiotic group consumed 1 gram of skimmed milk containing 1x109 CFU/gram of L. plantarum Dad-13 daily, with consumption period of 60 days for both groups. The result showed that dietary intakes of both groups were below recommended value (<70%). Lactobacillus plantarum and Bifidobacterium significantly increased after probiotic consumption while Enterobacteriaceae and Klebsiella pneumonia significantly reduced. Short-chain fatty acid (acetate, propionate, butyrate) significantly increased in probiotic group, which consequently lowered pH level. Subsequently, a significant increase was observed in body weight and height in both groups at the end of the study. Only BMI of probiotic group increased after consumption of probiotics.
Pandemi Covid-19 sudah terjadi lebih dari satu tahun. Pada masa adaptasi kebiasaan baru diharapkan dapat menerapkan adaptasi kebiasaan baru di segala lini masyarakat, tempat pendidikan, kantor, tempat umum dan lainnya. Perlu adanya pendampingan masyarakat untuk meningkatkan protokol kesehatan. Pendampingan masyarakat bertujuan untuk menumbuhkan pengetahuan masyarakat tentang gizi seimbang dan suplemen kesehatan, menumbuhkan pengetahuan masyarakat dalam membedakan suplemen kesehatan dan obat sebagai terapeutik serta menumbuhkan pengetahuan masyarakat tentang PHBS. Pendampingan ini dilaksanakan di Padukuhan Karang Tengah, Desa Nogotirto, Kecamatan Gamping, Kabupaten Sleman, Provinsi Daerah Istimewa Yogyakarta. Kegiatan pengabdian ini menggunakan metode ceramah dan demonstrasi. Metode ceramah untuk menjelaskan tentang tentang gizi seimbang dan suplemen kesehatan, membedakan suplemen kesehatan dan obat sebagai terapeutik dan pengetahuan masyarakat tentang PHBS. Metode demonstrasi untuk mempraktikkan Perilaku Hidup Bersih dan Sehat (PHBS) yaitu 3M (Memakai masker, Mencuci tangan, Menjaga jarak dan Menghindari kerumunan) di era adaptasi kebiasaan baru. Pengabdian ini dilakukan secara tatap muka, kemudian dilanjutkan dengan dibentuknya grup WhatsApp untuk berdiskusi lebih lanjut. Pengabdian ini mendapat respon yang baik oleh masyarakat dan peserta mendapatkan ilmu baru mengenai gizi seimbang dan suplemen di era adaptasi kebiasaan baru.
