In 2012, the World Organisation for Animal Health adopted 10 'General Principles for the Welfare of Animals in Livestock Production Systems' to guide the development of animal welfare standards. The General Principles draw on half a century of scientific research relevant to animal welfare: (1) how genetic selection affects animal health, behaviour and temperament; (2) how the environment influences injuries and the transmission of diseases and parasites; (3) how the environment affects resting, movement and the performance of natural behaviour; (4) the management of groups to minimize conflict and allow positive social contact; (5) the effects of air quality, temperature and humidity on animal health and comfort; (6) ensuring access to feed and water suited to the animals' needs and adaptations; (7) prevention and control of diseases and parasites, with humane euthanasia if treatment is not feasible or recovery is unlikely; (8) prevention and management of pain; (9) creation of positive human-animal relationships; and (10) ensuring adequate skill and knowledge among animal handlers. Research directed at animal welfare, drawing on animal behaviour, stress physiology, veterinary epidemiology and other fields, complements more established fields of animal and veterinary science and helps to create a more comprehensive scientific basis for animal care and management.

The objective of this work was to characterize bruises in bovine carcasses in Uruguay and to evaluate the economic impact. Thirteen abattoirs were visited during 2 years and bruises were identified, classified, and quantified by zone and degree (depth and size). One hundred carcasses were separated and bruises were cut out and weighed separately. From a total of 15 157 carcasses observed, 60.0% had at least one bruise; 42.0% of these had bruises on both sides. The expensive butt zone was the most damaged, followed by rib, shoulder and loin, respectively. The mean weight and standard error of the condemned trimmed meat was 1602 ± 212 g. It suppose a loss of 899 g per animal slaugtered in Uruguay. In a country sending 2.5 million heads of cattle to be slaughter yearly, this indicates an important financial loss. Improving transport conditions and personnel skills will probably result in a better welfare for the animals as well as better financial profit.

Several initiatives, including research and development, increasing stakeholders' awareness and application of legislation and recommendation, have been carried out in Latin America to promote animal welfare and meat quality. Most activities focused on the impact of pre-slaughter conditions (facilities, equipment and handling procedures) on animal welfare and meat quality. The results are encouraging; data from Brazil, Chile and Uruguay showed that the application of the improved pre-slaughter handling practices reduced aggressive handling and the incidence of bruised carcasses at slaughter in cattle and pigs. These outcomes stimulated some to apply animal welfare concepts in livestock handling within the meat production chain as shown by the increasing demand for personnel training on the best. To attend this demand is important to expand local studies on farm animal welfare and to set up (or maintain) an efficient system for knowledge transfer to all stakeholders in the Latin America meat production chains. However, it is clear that to promote the long-term progress in this field is important to deliver practical solutions, assuring that they match the technical and financial conditions of those who are the target of training programs.

Animals destined for meat production are usually exposed to many stressful conditions during production and particularly during preslaughter operations. Handling animals on farm, loading into and unloading from vehicles, transportation, passing through livestock markets, fasting, lairage and stunning can all affect their welfare. How badly welfare can be affected will depend on both the intrinsic factors of the specific type of animal involved and the extrinsic factors of the environment where those animals live or are being handled, including the animal handlers. In South America (SA), it has been part of a strategy for improving animal welfare (AW) to address not only ethical aspects, but to emphasize the close relationship existing between handling ruminants preslaughter and the quantity and quality of the meat they produce. This has resulted not only in improvements in AW, but has also brought economic rewards to producers which in turn can lead to higher incomes for them and hence better human welfare. For producers with a high number of animals, considering AW during production and preslaughter operations can determine the possibility of exporting and/or getting better prices for their products. At smallfarmer level, particularly in some less developed countries, where human welfare is impaired, using this strategy together with education has also been relevant. It is important that education and training in AW are done not only considering global knowledge, but also including specific geographical and climatic characteristics of each country and the cultural, religious and socio-economical characteristics of its people; therefore, research within the context of each country or region becomes relevant. The aim of this review was to show the results of research dealing with AW of ruminant livestock in Chile and some other SA countries. Some of the main problems encountered are related to lack of proper infrastructure to handle animals; long distance transport with high stocking densities in the larger countries; long fasting times due to animals passing through livestock markets and dealers; bad handling of animals by untrained personnel in these and other premises; and finally the lack of knowledge and skills by operators in charge of stunning procedures. Interventions at these stages have considered training animal handlers and transporters by showing them the consequences of bad handling with audiovisual material prepared on site. Research results have helped to improve AW and support the development of new legislation or to make changes in the existent legislation related to AW.

Average loading time was 26 min and 21 s and the perception of the truck drivers was correlated with the time took for loading and the use of devices. In 39.3% of the loadings only a flag was used. The average unloading time was 5 min and 54 s with a significant difference in time for the use of devices; only flag 3 min 51 s, cattle prod 6 min 43 s and sticks 8 min 09 s. Of the carcasses observed, 772 (9.5%) had no bruises, 873 (10.7%) had one bruise, 1312 (16.1%) two, 1231 (15.1%) three and 3944 (48.5%) had four or more bruises. Prevalence of bruises were highest on the Tuber-coxea (hip) (29.3%) following forequarter (22.4%), Tuber-ischiadicum (rear) (17.3%), ribs/flank (14.1%), rump/round (10.1%) and loin (6.8%). Bruises were 68.7% grade 1 and 31.3 % grade 2; there were no grade 3, the deepest ones, observed. It appeared that animal welfare training of truck drivers worked out well and the use of flags increased compared to a previous study in 2008.

The present study constitutes a review of the scientific articles about animal welfare in terrestrial farmed animals, published in 19 countries of Latin America. The main objectives were to quantify and characterize articles produced between 1992 and 2021 in farm animals' welfare using “Web of Science [v.5.32]” and “CAB Abstracts” databases. A total of 663 articles were found for the period analyzed, which were mainly in English (87%). The countries with the most publications were Brazil (43%), México (25%), Chile (12%), Uruguay (10%), Colombia (4%) and Argentina (2%). Cattle was the farm species most considered in the publications (41%), and the studies addressed mostly the on-farm production stage (76%). There was a rapid increase in the number of articles published in the last 15 years, accounting for 95% of the publications. This could be related to the publication of welfare standards by the World Organization for Animal Health (WOAH) since 2005, the creation of the Collaborating Center for Animal Welfare and Sustainable Livestock Systems—Chile-Uruguay-México in 2009, a Regional Strategy of Animal Welfare prompted by the WOAH in 2012 and the inclusion of animal welfare in the veterinary curriculum. The fact that most articles were in English shows that Latin American researchers have somehow overcome the challenge of publishing in a non-native language and their research can be read/cited worldwide. However considerable gaps in scientific productivity were identified in comparison to European and North American countries. Scientific research concerning the livestock industry in Latin America faces new challenges arising from the need to move toward more sustainable production systems within the One Welfare and One Health frame.

Thermal processing of ground beef, beef cubes or beef slices in commercially popular flexible pouches, effectively inactivated foot-andmouth disease (FMD) virus that had resulted from infection of cattle. Cooking the meat products at 75°C for 20 min or 80°C for 15 min was virucidal; however, FMD virus survived in ground beef products processed for shorter time periods and/or at lower temperatures. The processing schema described were limited to 200g samples of these meat products. Postmortem decrease of pH due to electrical stimulation of carcasses inactivated the virus in skeletal muscle but not in lymph mode tissue.

The potential benefits of keeping Zebu cattle in silvopastoral systems are well described in tropical regions. In order to obtain information on European breeds of beef cattle (Bos taurus taurus) in temperate climate zones, individual records of body weight and welfare indicators were obtained from 130 beef cattle. These belonged to four herds and were randomly allocated to two contiguous plots: Silvopastoral Systems (SPS) and Open Pastures Systems (OPS). The SPS in this study were areas with exotic trees of Eucalyptus globulus globulus for paper pulp production planted in a 2 × 2 design (two meters between each tree) over diverse, native grasses. The OPS were large open areas with a great diversity of native grasses, herbs, and small plots of trees where the animals could rest and shelter from extreme weather conditions. Over the course of one year, individual body weights and a number of specific animal welfare indicators were measured every 45 days. After a descriptive analysis, a generalized linear mixed model (GLMM) with a Gaussian distribution, with time and system (OPS or SPS) fitted as fixed effects and individuals nested by herd as random intercepts, was used. The results showed that weight gain did not differ between the two systems. None of the animals showed any sign of impaired welfare in either system over the study period. Silvopastoral systems offer animals a sustainable and richer environment that will improves their welfare. The additional income provided by the wood production allows the farmers to maintain their traditional cattle farming lifestyle.
