Cassava is generally consumed by Javanese who inhabited the areas where cassava plant is cultivated; therefore, culturally, it has ethnic importance. Even though formerly it was regarded as marginal food, its existence follows the nature of culture—ever-changing based on space and time. The study done aims to disclose the genealogy of various kinds of cassava-based foods in connection with Javanese food choices and food ways. Accordingly, the discussion encompasses the materials used, the preparation methods; cooking, serving, and giving suitable complements; the specific functions, the origin, and its development from the past to the present day. The findings significantly demonstrate that the numerous foods generated from cassava roots and leaves, covering staple foods, light meals, side dishes, and drinks, are manifestation of Indonesian cultural diversity. More importantly, this ethnic food in general is also inherent with the Javanese philosophy on living in harmony between humans and the nature surrounding that should be well managed. These two points underline that cassava-based food identity is not a mere cultural expression. It is built by Javanese communities through their natural experiences, simple knowledge, and hard efforts to make cassava-based foods still exist in agreement with the developing era.

Despite being one of the most popular staple foods in Indonesia, cassava roots contain cyanide that can cause death without proper processing. In traditional market, however, the variant of the roots, hence their exact cyanide concentration, is mostly unknown. Despite that, Javanese have successfully been curbing the cassava poisoning risk through generations. To revisit the role of the local food safety practice in reducing the cyanide concentration, this study investigated and simulated how Javanese in Malang Regency, East Java, Indonesia, traditionally prepare cassava roots for consumption. Two commonly marketed roots; white and yellow; were selected and cooked by steaming or roasting. The cyanide concentration of each stage was measured by picric acid method optimized for cassava roots. The analyses demonstrated that 30 min steaming peeled roots, as well as 50 min steaming and 30 min roasting the unpeeled roots reduced the cyanide content to 12-18 ppm, below the Indonesian acceptable limit of 40 ppm. The cooking duration and temperature of 100-230oC together contributed to decrease the cyanide concentration. Our findings concluded that Javanese applied traditional food safety management through the farmers’ preference to cultivate cassava with low cyanide level, the selection of fresh roots, and the cooking methods.

В Iндонезiї налiчується 62,9 мiльйона ММП, якi складаються з 62,1 мiльйона мiкропiдприємств i 757,090 малих пiдприємств. Всi цi ММП приносять 57,94 % валового внутрiшнього продукту Iндонезiї або 4,303 трлн iндонезiйських рупiй i охоплюють до 110,8 млн робiтникiв. Маланг -це мiсто в Iндонезiї, яке має безлiч ММП, зайнятих в сферi продовольства, одягу i рiзних галузей промисловостi, якi виробляють ремiсничi вироби в якостi сувенiрiв. Потенцiал ремiсничого виробництва в цьому мiстi багатообiцяючий. Оскiльки мiсцевi жителi самi продають рiзнi види ремiсничих виробiв, це фактично полегшує туристам пошук виробiв ручної роботи в якостi сувенiрiв, типових для Маланг. Типовий в цьому сенсi означає, що ремiсничi вироби, виробленi ММП, заснованi на iсторичному i культурному аспектi мiста. Iснуючi проблеми полягають в тому, що не iснує найкращої моделi, яка могла б використовуватися ММП для створення ремiсничих виробiв, характерних для Маланг. Метою даного дослiдження є порiвняння декiлькох варiантiв структурної моделi з метою отримання найкращої моделi. Це було зроблено за допомогою методу часткових найменших квадратiв (ПНК), в якому були визначенi споживчi потреби. Дане дослiдження пропонує найкращу структурну модель серед альтернатив, розроблених для ММП для створення ремiсничих виробiв на основi iсторичних цiнностей, мiсцевої культури i споживчих потреб.
