La contaminación del agua con metales pesados es un problema potencial de salud pública, debido a su toxicidad. Los métodos tradicionales de descontaminación se enfocan principalmente a tratar efluentes industriales con altas concentraciones de metales pesados, pero con desventajas por los altos costos, grandes espacios de operación y en ocasiones, empleo o generación de otras sustancias tóxicas. Los metales pesados con mayor toxicidad presentes en el agua son arsénico, cadmio y plomo, cuya exposición crónica puede dañar diversos órganos y promover el desarrollo de cáncer. La eliminación de estos metales del agua de consumo con menores concentraciones que aún representen un riesgo a la salud, puede llevarse a cabo por el fenómeno de biosorción. Los materiales biosorbentes son molecularmente, diversos, económicos y pueden ser desde biopolímeros hasta biomasa microbiana. Se conoce que algunas cepas de levaduras han mostrado gran capacidad de remoción de metales pesados en soluciones acuosas, destacando las del género Saccharomyces, particularmente Saccharomyces cerevisiae. La biosorción con levaduras es una alternativa prometedora para la eliminación de bajas concentraciones de As3+, As5+, Cd2+ y Pb2+ en agua de consumo. Sin embargo, es necesario seguir estudiando las condiciones para su aplicación a gran escala, así como otras posibilidades que permitan su optimización.
The extrusion process allows the production of nixtamalized corn flour rich in arabinoxylans, which help to prevent cardiovascular and intestinal diseases. During extrusion, physiochemical properties of nixtamalized corn flour are negatively modified. The use of enzymes such as xylanase in order to obtain nixtamalized corn flour using extrusion has been studied as an alternative to reduce these changes in corn flour tortilla. The aim of this research was to evaluate changes in protein solubility of extruded nixtamalized corn flour with and without different concentrations of xylanase enzyme (0.05, 0.075, and 0.1%, w/w). Soluble proteins of each corn flour were extracted and analyzed by SE-HPLC, while insoluble proteins were determined by the combustion method. In addition, each corn flour was analyzed by scanning electron microscopy (SEM). Results showed that the extruded nixtamalized corn flour, with and without xylanase, increased the protein solubility, and this effect was lower in extruded nixtamalized corn flour with xylanase. Insoluble protein diminished in corn flours either with or without xylanase enzyme. The addition of xylanase reduces the effect that the extrusion process has on the solubility proteins of extruded nixtamalized corn flour.
Los alimentos funcionales producen un efecto benéfico en la salud de quien los consume. Algunos de ellos se desarrollan adicionando probióticos o compuestos bioactivos, que son sensibles a condiciones adversas presentes durante la vida de anaquel del alimento o al pasar por el tracto gastrointestinal. En ambos casos, una alternativa para protegerlos, es encapsularlos en matrices grado alimenticio. Se co-encapsularon Lactobacillus plantarum y ácidos grasos omega-3 (Ω3) en una matriz de alginato-pectina. Los Ω3 se obtuvieron por extracción en frío de aceite de linaza; su análisis cuantitativo por cromatografía de gases mostro un contenido del 58 %. La relación de matriz polimérica que produjo mejores cápsulas fue 2:1, usando concentraciones de 1.5 % y 2.0 %, de alginato y pectina, respectivamente. La mejor relación matriz-probiótico-linaza fue de 5.0:1.0:1.0 (suspensión celular conteniendo aproximadamente 2.8 x 108 UFC/mL). Se obtuvieron cápsulas esféricas con carga superficial, negativa (- 4.6± 0.41 mV) y diámetros entre 150 y 200 μm. La eficiencia de encapsulamiento de L. plantarum fue del 85 %, observándose una disminución de 0.7±0.14 Log UFC/g, después de liofilizar las microcápsulas para mejorar su estabilidad durante el almacenamiento. Después de 30 días a -20 °C, no se observaron diferencias (p > 0.05) en la sobrevivencia del probiótico, ni cambios en la concentración de peróxidos del aceite co-encapsulados, indicando que el encapsulamiento protegió tanto a L. plantarum como a los Ω3. Estos micro-encapsulados podrían utilizarse en la formulación de productos funcionales debido a su bajo costo de producción y fácil estabilización.
