İnsan emeğini örgütlemenin bir yöntemi olarak kölelik sistemine ihtiyaç duyduğu iş gücünü ve enerjiyi sağlayacak olan kölenin sağlıklı, güçlü ve istihdam edileceği işe uygun kalifiye eleman özelliğini taşıyor olması gerekirdi. İktisadi ve sosyal hayatın çarkları içinde gerekli özellikleri taşımayan köleler, hukuka yansıdıkları biçimiyle ayıplı veya marazlı olarak tanımlanırdı. Bu çalışmada amaçlanan, 17. yüzyıl Kırım coğrafyasında satış iptallerine konu olan kusurlu köleler bağlamında sorun edilen nitelikleri, etnik, cinsiyet, sağlık, bedensel ve estetik alanlarına dayalı olarak kategorize etmek ve Kırım kadı sicilleri ve Osmanlı şeyhülislamlarının verdiği fetvalar ışığında bu kusurların ne türden ticari ve sosyal-toplumsal sorunlara yol açtığını değerlendirmektedir.
İnsanın yaşamını devam ettirebilmesi için gerekli fizyolojik ihtiyaçların başında yemek yeme gelmektedir. Yiyeceklerin hazırlanması, sofraya konması, yenmesi ve bu süreçte ortaya çıkan ritüeller beslenme kültürünü ortaya çıkarmaktadır. Her toplumun kendi yaşayış tarzına göre şekillenen beslenme ve mutfak kültürü tarihçilerin ilgisini çekmektedir. Bu çalışmada yeme, içme, beslenme alışkanlıkları ve mutfak araç gereçleri odak noktasına alınarak 17. yüzyıl Kırım mutfağı mercek altına alınacaktır. Kırım yarımadası, Kırım Tatarları başta olmak üzere Nogay, Karay, Ermeni, Yahudi, Kıptî gibi hem inanç hem de kültür bakımından farklı topluluklara ev sahipliği yapmıştır. Bu zengin portrenin ortaya çıkardığı sonuçlardan birisi, çeşitlilik içinde zenginleşmiş ve ortak kültürel varlık haline gelmiş mutfak kültürüdür. Çalışmamızda arşiv kaynakları ve seyahatnameler temel alınarak Kırım mutfağı aydınlatılmaya çalışılacaktır.
