ÖzNohut, dünyada en fazla tüketilen baklagiller içerisinde ikinci s›rada yer almaktad›r. Bu çal›flmada, nohut tanesinin kabuk k›sm›n›n tüm tanenin kimyasal içerik ve beslenme özellikleri üzerine etkisinin araflt›r›lmas› amaçlanm›flt›r. Bu kapsamda taneden ayr›lan kabuk k›s›mlar› ve kabuksuz nohudun baz› fiziksel ve kimyasal özellikleri belirlenmifltir. Ayr›ca, örneklerin besleyicilik özellikleri aç›s›ndan önemli olan fenolik madde içerikleri, antioksidan aktiviteleri ve safra asitlerini ba¤lama kapasiteleri de analiz edilmifltir. Elde edilen sonuçlara göre nohut kabu¤unun tüm nohut tanesinin yaklafl›k %5'lik bir k›sm›n› oluflturdu¤u ve di¤er baklagil kabuklar›na göre daha ince oldu¤u görülmüfltür. Kabuk ve kabuksuz nohudun diyet lif içerikleri s›ras›yla %73.89 ve %13.51 olarak bulunmufltur. Toplam sindirilebilirlilik de¤erleri ise s›ras›yla %15.4 ve %74.5 olarak belirlenmifltir. Ayr›ca nohudun kabuk k›sm›n›n mineral maddelerce kabuksuz k›sma göre daha zengin oldu¤u sonucuna var›lm›fl, ancak beslenme özellikleri aç›s›ndan incelendi¤inde nohut kabu¤unun tüm nohut tanesi içerisindeki katk›s›n›n düflük oldu¤u belirlenmifltir.Anahtar kelimeler: Nohut, nohut kabu¤u, sindirilebilirlik, fenolik madde, kimyasal içerik, safra asitleri ba¤lama. EFFECT OF SEED COAT ON THE PHYSICAL, CHEMICAL AND NUTRITIONAL PROPERTIES OF WHOLE CHICKPEA AbstractChickpea is the second most consumed legume in the world. In this study, the effects of seed coat on chemical composition and also on the nutritional properties of whole chickpea seed were studied. In this context some physical and chemical analysis were conducted on both seed coat and coatless chickpea flour. Phenolic content, antioxidant activity and bile acid binding capacity of the samples were also determined, in order to specify the nutritional benefits of the samples. The results showed that seed coat constitute approximately 5% of the whole chickpea seed and the seed coat thickness was found to be thinner than most of the other legumes. Chickpea seed coat was found to be rich in dietary fiber and minerals. However, the contribution of the seed coat on nutritional benefits of the whole seed were determined to be limited.
