In this paper we advocate the application of Artificial Intelligence techniques to quality assessment of food products. Machine Learning algorithms can help us to: (a) extract operative human knowledge from a set of examples; (b) conclude interpretable rules for classifying samples regardless of the non-linearity of the human behaviour or process; and (c) help us to ascertain the degree of influence of each objective attribute of the assessed food on the final decision of an expert. We illustrate these topics with an example of how it is possible to clone the behaviour of bovine carcass classifiers, leading to possible further industrial applications. #

The effects of the exogenous fibrolytic enzyme (ENZ) commercial preparation Dyadic® xylanase PLUS (Dyadic International, Inc., Jupiter, USA), containing endo-1,4-β-d-xylanase, on ruminal fermentation of maize stover, oat straw, and sugarcane bagasse were examined using the in vitro gas production (GP) technique. The ENZ commercial preparation was added at 0 (control), 60 (low), 120 (medium), and 240 (high) µg/g dry matter of substrate, and at two times of application (direct addition just before fermentation or with a 72-h pre-incubation before fermentation). Ruminal GP volumes were recorded at 2, 4, 6, 8, 10, 12, 14, 24, and 48 h of incubation, and substrate degradability and concentration of fermentation end-products (volatile fatty acids, ammonia, methane) in the cultures were determined at 48 h of incubation. Increased (P < 0.05) GP volume was observed in fibrous feeds treated with ENZ compared with untreated substrates. The pre-incubation vs the direct addition of ENZ resulted in greater GP volume (P < 0.05) with the three tested feeds. Enzyme addition decreased (P < 0.05) rumen pH compared to control when maize stover and sugarcane bagasse were incubated. Ammonia-N and total volatile fatty acids (VFA) were not affected (P > 0.05) by ENZ application in maize stover and oat straw. However, total and individual VFA concentrations, and CH 4 and CO 2 volumes were greater (P < 0.05) when sugarcane bagasse was incubated with 240 µg ENZ/g (P < 0.05). It can be concluded that the application of endo-1,4-β-d-xylanase enhances rumen fermentation of roughages, although the magnitude of the effects depends on the fibrous substrate fermented, the time of application, and the amount of enzyme added.

In this paper a methodology is developed to improve the design and implementation of a linear morphological system in beef cattle using artificial intelligence. The proposed process involves an iterative mechanism where type traits are successively defined and computationally represented using knowledge engineering methodologies, scored by a set of trained human experts and finally, analysed by means of four reputed machine learning algorithms. The results thus achieved serve as feed back to the next iteration in order to improve the accuracy and efficacy of the proposed assessment system. A sample of 260 conformation records of the Asturiana de los Valles beef cattle breed is shown to illustrate the methodology. Three sources of inconsistency were detected: (a) the existence of different interpretations of the trait’s definition, increasing the subjectivity of the assessment; (b) the narrow range of variation of some of the anatomical traits assessed; (c) the inclusion of some complex traits in the assessment system. In this sense, the reopening of the evaluated Asturiana de los Valles assessment system is recommended. In spite of the difficulty of collecting data from live animals, further implications of the artificial intelligence systems on morphological assessment are pointed out.

This study analyzed the psychomotor profiles of preschool stage students and to determine how these data agreed with the students' teachers' subjective assessment. We also correlated these data with other variables such as age, gender, and family influence. A total of 211 children aged 3 to 6 years, in the second cycle of preschool from 30 classes of 10 schools in Spain participated. Additionally, 30 preschool teachers from these classes participated. Study results revealed serious teacher misperceptions regarding their students' psychomotor development, with low agreement rates between students and teachers in the motor dimension and slight agreement rates in communicative, cognitive, and social areas. The reasons for and implications of these misperceptions are discussed.

A highly accurate experimental technique is presented for the continuous, simultaneous, and automatic determination of speed of sound and density in pure liquids and solutions. The digital elements of the equipment are fully computerized by a PC, via IEEE-488 bus and RS232C serial port interfaces. The software, a LabView program developed by us, controls the automatic measuring procedure and obtains, for each concentration, the speed of sound from an average over 150 measurements of the time between two consecutive echoes of a signal digitized at 1 G S/s with 250 000 points, and the density from an average over 90 000 measurements of the period of oscillation of a vibrating tube. The experimental technique and the software have been setup by measuring, at 298.15 K, the speed of sound and density of aqueous solutions of procaine hydrochloride, p-nitrophenyl-α-D-glucopyranoside, and β-cyclodextrin, previously measured by us with a manual method. A comparison between both methods is also included.
