La industria de bebidas alcohólicas ha crecido exponencialmente en cuanto a la elaboración de productos con contenido de alcohol de forma artesanal. Así, se propone implementar una alternativa de producción agroindustrial mediante la elaboración de vino de frutas a base de curuba (Passiflora mollissima) usando una cepa de levadura Saccharomyces Cerevisiae (Var. Bayanus). Se desarrollaron tres fases, la primera consistió en la obtención y fermentación de la pulpa de curuba; la segunda fase comprendió la caracterización fisicoquímica y microbiológica, evaluando parámetros como pH, titulación acido-base, solidos solubles, color, viscosidad, conteo de levaduras mediante la siembra en profundidad en agar YGC y recuento de BAL en agar MRS para verificar la fermentación maloláctica; finalmente, se realizó el análisis sensorial a través de un análisis cuantitativo descriptivo (QDA) en solitario y maridado. El resultado obtenido fue una bebida con un pH de 3,14±0,02, una viscosidad de 2,31±0,02 cP, contenido de solidos solubles de 7,65±0,07 °Brix y un contenido de alcohol de 12,91±0,19 v/v. De esta manera, el estudio demuestra que la curuba tiene un alto potencial biotecnológico en la elaboración de bebidas fermentadas, ofreciendo una alternativa adicional para la elaboración y comercialización de nuevos productos en el departamento del Huila (Colombia).
El vino tradicional de uva ha sido una bebida de éxito desde sus inicios en su elaboración en antiguas civilizaciones, pero a medida que el tiempo ha ido avanzando, ha surgido la curiosidad de elaborar bebidas alcohólicas usando frutas con una amplia gama de características químicas y biológicas que pueden ser convertidas en vinos de frutas de calidad excepcional, creando un espacio donde las personas pueden experimentar con las cantidades de materia prima usada, temperaturas, color de los recipientes y almacenamiento de la bebida final obteniendo grandes resultados. El objetivo de esta investigación se centró en evaluar el comportamiento del color del vino artesanal de curuba “Son del Alba” en su etapa de elaboración, almacenamiento y maduración con el fin de observar de qué forma variables como temperatura de fermentación y almacenamiento, color de la botella, clarificante y parámetros fisicoquímicos (pH, solidos solubles, grado alcohólico, viscosidad y porcentaje de acidez) inciden en la tonalidad e intensidad del color de la bebida final mediante el uso de un colorímetro Konica Minolta a través del espacio de color CIELab. Los resultados de color se compararon con estudios de vinos de frutas tropicales desarrollados en la Universidad Surcolombiana y demás literatura disponible, donde se pudo observar que las variables mencionadas anteriormente, inciden en diversas proporciones en el color final de la bebida omitiendo el color de la botella la cual no influyo en la maduración y coloración final del vino de frutas de curuba.
