The genetic background determined the composition of black currants and the compositional response to weather conditions. The variety Melalahti had higher values for glucose and sugar/acid ratio and lower contents of fructose, citric acid, quinic acid, and vitamin C than the varieties Mortti and Ola (p<0.05). In comparison to black currants grown in northern Finland (latitude 66 degrees 34' N), the berries grown in southern Finland (latitude 60 degrees 23' N) had higher contents of fructose, glucose, sucrose, and citric acid (by 8.8, 6.1, 10.0, and 11.7%, respectively) and lower contents of malic acid, quinic acid, and vitamin C (by 31.1, 23.9, and 12.6%) (p<0.05). Fructose, glucose, and citric acid in Melalahti were not influenced by the weather, whereas their concentrations in Mortti and Ola correlated positively with the average temperature in February (Pearson's correlation coefficients = 0.53-0.79, p<0.01) and July (Pearson's correlation coefficients = 0.63-0.87, p<0.01) and negatively with the percentage of the days with a relative humidity of 10-30% from the start of the growth season until the day of harvest (Pearson's correlation coefficients = from -0.47 to -0.76, p<0.01). Positive correlations existed between fructose and glucose (Pearson's correlation coefficients = 0.95-0.96, p<0.01), citric acid and fructose (Pearson's correlation coefficients = 0.57-0.75, p<0.01), as well as between citric acid and glucose (Pearson's correlation coefficients = 0.56-0.70, p<0.01) in the three varieties because of the closely related metabolic pathways.

Dietary supplementation with BCSO was well tolerated and it transiently reduced the prevalence of atopic dermatitis. The raw cutin (i.e., extractive-free isolated cuticular membrane) fraction from Finnish berries, sea buckthorn (Hippophaë rhamnoides), black currant (Ribes nigrum), cranberry (Vaccinium oxycoccos), lingonberry (Vaccinium vitis-idaea), and bilberry (Vaccinium myrtillus), was depolymerized by NaOMe-catalyzed methanolysis. The composition of cutin monomers was determined by GC-(EI)MS analysis either as methyl esters or as TMSi esters, with OH groups derivatized to TMSi ethers. There was a notable difference in the degree of depolymerization, ranging from 6 to 47%. The extractive-free berry cuticle, that is, raw cutin, thus contains <50% polyester polymer cutin. The predominant cutin monomers were C(16) and C(18) omega-hydroxy acids with midchain functionalities, mainly epoxy and hydroxyl groups. Typically, the major compounds were 9,10-epoxy-18-hydroxyoctadecanoic acid, 10,16-dihydroxyhexadecanoic acid, 9,10,18-trihydroxyoctadecanoic acid, 9,10-epoxy-18-hydroxyoctadec-12-enoic acid, and 18-hydroxyoctadec-9-enoic acid. The amount of epoxyacids was rather high in sea buckthorn ( approximately 70%) and cranberry ( approximately 60%), compared with the other berries. The black currant cutin differed from that of the other berries with a significant portion of hydroxyoxohexadecanoic acid ( approximately 12% of total monomers). This investigation of the cuticular hydroxy acids of five Finnish berries is part of the exploitation of the northern natural resources related to the chemical composition, nutritional value, and sensory properties.

Fractionation is a potential way to valorize under-utilized fishes, but the quality of the resulting fractions is crucial in terms of their applicability. The aim of this work was to study the quality of protein isolates and hydrolysates extracted from roach (Rutilus rutilus) and Baltic herring (Clupea harengus membras) using either pH shift or enzymatic hydrolysis. The amino acid composition of protein isolates and hydrolysates mostly complied with the nutritional requirements for adults, but protein isolates produced using pH shift showed higher essential to non-essential amino acid ratios compared with enzymatically produced hydrolysates, 0.84–0.85 vs. 0.65–0.70, respectively. Enzymatically produced protein hydrolysates had a lower total lipid content, lower proportion of phospholipids, and exhibited lower degrees of protein and lipid oxidation compared with pH-shift-produced isolates. These findings suggest enzymatic hydrolysis to be more promising from a lipid oxidation perspective while the pH-shift method ranked higher from a nutrient perspective. However, due to the different applications of protein isolates and hydrolysates produced using pH shift or enzymatic hydrolysis, respectively, the further optimization of both studied methods is recommended.

Analysis of regioisomers of triacylglycerols of northern currant seed oil by tandem mass spectrometryCurrant oils have special health properties due to their moderate contents of a-linolenic, g-linolenic and stearidonic acids. The distribution of fatty acids (FA) in the triacylglycerols (TAG) may affect the beneficial effects. Seed oils of wild northern red currant (NRC) (Ribes spicatum L.) from Northern Finland and of wild alpine currant (AC) (R. alpinum L.) from the South-West coast of Finland were investigated. The purified TAG were analysed by tandem mass spectrometry by applying the ammonia negative ion chemical ionisation -collision-induced dissociation method. Molecular weight fractions rich in C18:3 FA and C18:4 FA were investigated. Of the total oil, the molecular weight species 54:7 (ACN:DB), 54:8 and 54:9 were more abundant in NRC than in AC, being 21.0%, 15.8%, 7.4% and 16.2%, 11.2%, 4.8%, respectively (p ,0.05). The species 52:6 was more abundant in AC (3.1%) than in NRC (2.6%) (p ,0.05). The preferential order of FA to be in the sn-2 position in both berries was typically C18:1 . C18:2 . C18:4 . C18:3. No difference was observed between relative locations of C16:0 FA and C18:3 FA in either of the oils. Within the TAG consisting of FA combinations C18:3/C18:3/C18:1 (54:7), C18:1 was more preferentially in the sn-2 position (p ,0.05) in AC (93.2%) than in NRC (74.6%), and in the case of C18:3, the preference was vice versa. Within the molecular weight species 54:9, FA combination C18:4/ C18:3/C18:2, linoleic acid preferentially occupied the secondary position (p ,0.005) in both berries, and the proportion of the TAG regioisomer pair sn-C18:3-C18:4-C18:2 1 sn-C18:2-C18:4-C18:3 was more abundant (30.2%) in NRC than in AC (15.3%). Within the TAG species 52:6, proportions of all the existing combinations, C16:0/C18:3/ C18:3, C16:0/C18:4/C18:2 and C16:1/C18:3/C18:2, varied between the two berry species (p ,0.005).

Children of smoking parents had highly significantly elevated levels of Th2-type cytokines IL-4, IL-5 and pro-inflammatory cytokine TNF. The detrimental effects of parental smoking on the child's immune function should lead us to pay more attention to supporting parents to stop smoking.
