El descubrimiento e implementación de nuevas estrategias de biorremediación es un campo de gran interés actualmente a nivel mundial. Recientemente, la utilización de extractos acuosos y etanólicos procedentes de plantas ha atraído el interés general debido a que pueden ser obtenidos en el laboratorio y sus efectos pueden analizarse en condiciones controladas dentro de invernaderos, además de que se ha demostrado que no dañan el medio ambiente y sus residuos son fáciles de degradar. De manera interesante, se ha descrito que algunos compuestos también poseen actividad contra patógenos, entre estos se ha encontrado que extractos de la pulpa de café son capaces de inhibir el crecimiento de bacterias patógenas como Escherichia coli y Staphylococcus aureus. En esta revisión, discutiremos la implicación de los componentes antioxidantes y fitoquímicos de extractos de pulpa de café sobre el crecimiento de bacterias y hongos que ocasionan daño en los alimentos y en salud humana.
