Objetivou-se com este estudo avaliar o peso dos cortes cárneos comerciais e vísceras de dois grupos genéticos, bovinos Sindi e bubalinos Mediterrâneos abatidos com pesos médios semelhantes. O experimento foi realizado no campus da UFRuralRJ, onde 14 animais inteiros foram terminados em confinamento (7 bovinos e 7 Bubalinos), recebendo a mesma dieta no período de dezembro de 2004 a abril de 2005. Os animais foram abatidos quando alcançaram o peso vivo médio de 488,3 (± 8,94) kg para bovinos Sindi e bubalinos mediterrâneos com 492,5 (± 8,61) kg. O delineamento experimental foi o inteiramente casualizado. O peso da pá (16,5 vs 11,8 kg), peito (4,1 vs 2,9 kg), acém (15,4 vs 9,0 kg), contra filé (6,9 vs 5,8 kg), chã (8,8 vs 6,7 kg), porção comestível do dianteiro (90,8 vs 89,5%) e do serrote (88,6 vs 87,5%) foram maiores nos bovinos. Os demais cortes cárneos não apresentaram diferenças entre os grupos genéticos. Em relação as vísceras bubalinos apresentaram coração (1,42 vs 2,18 kg) , pulmão (2,34 vs 2,88 kg), estômago (14,42 vs 16,97 kg) e intestinos (7,42 vs 9,03 kg) mais pesados que bovinos. Bovinos Sindi apresentam maior valor comercial por possuir maior porção comestível, que está relacionada a um maior ou igual peso dos cortes cárneos e menor ou igual peso de vísceras em relação a bubalinos Mediterrâneos
